Ingredients
- Buckwheat noodles - 100-150 g
- Onion greens - 2 stalks
- Ginger root - 2-3 cm.
- Garlic - 2 cloves
- Olive or sesame oil - 2 tsp.
- Sunflower oil (for frying) - 1-2 tbsp. l
- Fresh or frozen vegetables - 150-200 g
- Carrots - 1/2 pcs.
- Champignons - 250 g
- Soy sauce - 2-3 tbsp. l
- Spicy sweet chili sauce - 1-2 tsp.
- Starch - 1/2 tsp
- Rice vinegar - 1 tbsp. l
- Sugar - 1 tsp.
- Water - 1.5 L
- Cold water - 1 l
Step cooking
- To begin with, pour 1.5 l of clean filtered water into the pan, salt and bring to a boil.
- We put buckwheat noodles into boiling water. Stir and cook until half cooked.
- Next, we transfer the noodles into a container with cold water and rinse.
- After that, decant the excess liquid and add 2 tsp to the noodles. olive or sesame oil. Mix.
- We thoroughly wash the mushrooms and, if necessary, clean them. If the mushrooms are young, peeling them is not necessary. Prepared mushrooms are cut into thin plates. Pour 1-2 tablespoons into a well-heated pan l sunflower oil or any other oil intended for frying. We spread the chopped mushrooms into the pan. Fry for 4-5 minutes over medium heat, stirring occasionally.
- While the mushrooms are fried, peel 1/2 small carrots from the skin and cut it into thin strips. Optionally, you can use the Korean carrot grater. Next, shift the mushrooms to the side and add the carrots to the pan, as well as any other vegetables as you wish. You can use ready-made vegetable mixtures or add only broccoli, bell pepper, cauliflower or Brussels sprouts, etc. Stir and fry over medium heat for 7-8 minutes.
- At this time, peel 2 cloves of garlic and cut into small cubes, after which chopped garlic is added to the remaining ingredients in a pan. Mix and fry for 1-2 minutes.
- Next, proceed to the preparation of the sauce. In a separate container, mix 2-3 tbsp. l soy sauce, 1 tbsp. l water, 1 tsp sugar, 1 tbsp. l rice vinegar, 1-2 tsp. sweet hot chili sauce, 1/2 tsp starch, and mix everything thoroughly.
- We spread the noodles in a pan, pour the resulting sauce, gently mix and fry for another 2 minutes.
- Finely chop two stalks of onions and sprinkle the finished dish on top. Enjoy your meal.
