Step cooking

  1. Pour 0.4 liters of warm water into a bowl, its temperature should be 38ºС. Pour 10 g of dry yeast into the water. If you have live yeast, take 30 g. Add 15 g of sugar and mix well with a whisk. About 10 minutes will be required for the dough to come up, this will be seen by the curvaceous cap that appears.
    First prepare the dough.
  2. Sift 0.3 kg of wheat flour, add 0.3 kg of black rye wholemeal to it - no need to sift it.
    Combine the wheat and rye flour in a bowl.
  3. Add 6 g of salt to the flour, mix well so that the salt is evenly distributed in the flour. Salt should always be added precisely to flour, if added to dough, it will interfere with full fermentation.
    Add salt to flour, mix dry components.
  4. Pour dough into flour and start kneading the dough.

  5. During mixing, add 25 g of vegetable oil.

  7. We form the finished dough into a ball (hands should be greased with vegetable oil), lightly grease it with butter and put it in a bowl. Cover the bowl tightly with cling film.

  10. Cover the baking sheet with parchment paper and lightly sprinkle with flour. We spread the formed bread on a baking sheet, sprinkle it with a little bit of flour.
