Step cooking
- Pour 0.4 liters of warm water into a bowl, its temperature should be 38ºС. Pour 10 g of dry yeast into the water. If you have live yeast, take 30 g. Add 15 g of sugar and mix well with a whisk. About 10 minutes will be required for the dough to come up, this will be seen by the curvaceous cap that appears.
- Sift 0.3 kg of wheat flour, add 0.3 kg of black rye wholemeal to it - no need to sift it.
- Add 6 g of salt to the flour, mix well so that the salt is evenly distributed in the flour. Salt should always be added precisely to flour, if added to dough, it will interfere with full fermentation.
- Pour dough into flour and start kneading the dough.
- During mixing, add 25 g of vegetable oil.
- When the ingredients are mixed - you can continue to knead on the table (slightly sprinkled with flour), it is much more convenient. The dough should not turn out to be liquid, it should be well behind the hands and the table, as necessary, add a little flour.
- We form the finished dough into a ball (hands should be greased with vegetable oil), lightly grease it with butter and put it in a bowl. Cover the bowl tightly with cling film.
- The dough should be in a warm place for about an hour. Put the bowl in the microwave, next to it is a glass of hot water. Close the door, wait an hour. During this time, the dough will increase in volume by more than 2 times.
- At the end of this time, put the dough on the table, a little sprinkled with flour, and slightly knead it. Initially, we give the test the shape of a kolobok, and already from it we make such a shape as you like. For example, you can make an elongated bun - stretch along the length and slightly crush. Then we roll along the length, stretching to the sides.
- Cover the baking sheet with parchment paper and lightly sprinkle with flour. We spread the formed bread on a baking sheet, sprinkle it with a little bit of flour.
- We cover the dough with a towel and leave for 40 minutes. During this time, the volume of bread will increase by at least 3 times.
- With a sharp blade we make several notches diagonally on the test.
- We send the baking sheet to the oven, preheated to 190ºС. Baking bread will be 35-40 minutes. Put the finished bread on a wire rack and wait for it to cool.
