Step cooking
- We sort the cauliflower weighing 650 g into inflorescences.
- Put in a pan and add 0.5 tsp. salt. Also add a bay leaf. If desired, put 2-3 branches of thyme.
- Pour 700 ml of milk.
- Bring to a boil and cook for 15 minutes.
- Remove thyme and lavrushka.
- We take the cabbage out of the milk with a slotted spoon so that the glass is full of liquid. We set aside milk.
- Grind the cabbage with a blender.
- Add - if necessary - 1-2 tbsp. l hot milk.
- Also add 5-10 g of butter.
- Pepper to taste. We try, if necessary - add salt. Whisk again with a blender.
- When serving, decorate with herbs.
Useful Tips
- You can simply boil the cabbage in water, and then beat with milk, cream or sour cream.
- If desired, add mashed fried onions and a couple of cloves of garlic to this puree.
- Cheese (hard or processed) will add special tenderness to the puree, which should be grated first.
- The addition of mustard and curry powder will add a piquant flavor to the dish.
- For mashed potatoes, you can use frozen cauliflower, you do not need to defrost it before cooking, immediately dip it in boiling water or milk.
- Before starting the process, it is recommended to keep the cabbage in the water for 15 minutes in order to get rid of insects.
