Step cooking
- Cooking bread. To do this, pour 250 milliliters of water or milk into a deep bowl with a thick bottom. Add 60 grams of flour.
- We boil the flour with the liquid over medium heat, stir with a spatula. Bring the mass to a dense state. Let cool the tea leaves, and it can be used. You can also make tea leaves in advance or use them later. You can keep the tea leaves in the refrigerator for up to three days.
- Now activate the yeast. To do this, add 200 milliliters of warm milk (approximately 36-38 degrees) and 30 grams of live yeast to the tank. If you use dry yeast, you will need 10-12 grams. There we add one teaspoon of sugar and 60 grams of flour. Mix the ingredients well and leave for about 15-20 minutes. When a lush yeast cap is formed in the container, this means that the yeast has activated and can be used.
- Now prepare the dough. All products for yeast dough should always be at room temperature. To make the dough, mix 650 grams of sifted flour, 100 grams of sugar and 10 grams of vanilla sugar. There we add one incomplete teaspoon of salt and one tablespoon of dried cream or milk powder. Mix everything well with a whisk.
- Add to this dry mixture the previously prepared yeast dough and tea leaves. If the tea leaves were kept in the refrigerator, be sure to get it in advance so that it warms up to room temperature. Add 2 eggs to the same mixture and knead the dough in a dough mixer for about 1 minute. Manually making such a dough will be quite difficult to knead.
- Add soft butter (about 90 grams) to the mixture and continue to knead the dough in a dough mixer. At medium speed, from this moment on, the dough should be kneaded for about 15 minutes.
- The dough is very soft and slightly sticky. Put the dough in a bowl, slightly oiled. We cover the bowl with a towel or film and put the dough in a warm place for 1-1.5 hours. After a while, the dough will double. We spread it on the table, sprinkled with flour.
- Divide the dough into as many pieces as you want to make buns. In this case, 12 pieces are obtained.
- From each part we form a ball, roll it out a bit in our hands. Cover all the balls with a film and leave for 10 minutes. It is important that the distance between the balls is at least three centimeters.
- After a while, roll out rolls with a rolling pin. Shape the buns as you like. You can make a cake and roll it.
- Lubricate the pan or baking sheet with plenty of butter. We spread the buns on a baking sheet and leave for 40-50 minutes, so that the buns slightly increase in size.
- Grease the buns with milk or egg. We put the buns in a preheated oven to 180 degrees and bake at this temperature for about 30 minutes until cooked.
- You can smear hot buns with a piece of butter. Buns are ready, bon appetit!
