Ingredients
- Currants - 1.5 kg
- Water - 1.5 cups
- Sugar - 1.5 kg (6 cups)
- Baking soda for washing cans - 4 tsp.
Step cooking
- We first sort the currant and wash it in a container of water, peeling from small twigs, leaves, green or crushed berries. You can fill the berries with water and leave for some time, so that small debris floats up.
- Prepare cans and lids for rolling up. Wash each jar and lid with a new sponge for dishes and baking soda. The jar needs about 1 tsp. soda. Then the container must be thoroughly washed and rinsed several times so that there are no traces of soda on the glass.
- The washed cans are filled by 2/3 with steep boiling water, and after a minute we pour the boiling water in a circular motion so that the water scalds all the walls of the can. You can sterilize the jars in another way: wash each and warm in the microwave for 3 minutes.
- Pour lids washed with soda with boiling water in a pan or bowl and boil for 5 minutes.
- We start cooking jam: put on the fire an enameled bowl or enameled pan with a wide bottom and pour 1.5 cups of water into it.
- While stirring, pour 1.5 kg (6 cups) of sugar and boil the syrup. When the sugar is completely dissolved and the syrup begins to boil, lay the black currant.
- Let the berries boil in syrup, and cook over low heat for 5 minutes, stirring and removing foam.
- We fill the jar with jam “on the shoulders”. Wipe the neck of the jar dry with a clean cotton cloth or gauze and twist the lid, holding a hot jar with a kitchen towel so as not to burn yourself.
- Jars do not need to be turned over; they are simply tidied up in a pantry or closet where jam can be stored all winter.
