- Before cooking, 1 cup of millet groats must be cleaned, as it is considered one of the most "dirty" among cereals. To do this, we first sort it out from small debris. Also note that the cereal was bright yellow, this indicates its quality, such cereal will not be bitter.
- Next, pour the sorted groats into the stew-pan and fill it with 1 glass of cold water. We turn on the gas or electric stove on medium heat and put the saucepan with porridge to boil.
- When millet porridge boils, turn off the heat and thoroughly rinse through a sieve for 5-7 minutes to clear water. If you notice black grains in the porridge, then you need to get rid of them. Rinse and clean the cereal is very important, do not take this process lightly. If the cleaning takes more than 7 minutes - it's okay, the main thing is to clean it.
- Pour the washed porridge again into a stewpan and pour exactly 2 cups of boiling water per 1 cup of cereal, calculated as 1 to 2. If you add less, the porridge will be dry, and if more, not crumbly enough. Bring to a boil, carefully collect the excess foam from boiling porridge, because it definitely will not be useful to us, but only spoil the taste.
- Cook porridge for exactly 10 minutes with the lid open. At the same time, after 5 minutes, add salt, spices to taste and 1 teaspoon of sugar to the porridge. If you like sweet cereal, add a pinch of salt and 2 teaspoons of sugar. If porridge will be used as a side dish for salty dishes, then add a pinch of salt and a pinch of sugar.
- After 10 minutes, the porridge will absorb all the water. Take 50 grams of butter, divide it into small pieces and spread on top of the porridge. Butter will dissolve and due to this porridge will turn out to be very friable.
- Cover, cook another 1 minute. Next, turn off the fire and cover the stewpan with porridge with a duvet or jacket for 30-40 minutes, so that the porridge is well insisted.
- This is a basic recipe for porridge. So that in the future it does not bother to taste, you can add to it: cardamom, cinnamon, anise or star anise. Porridge is ready, you can serve it to the table. Enjoy your meal!
