- To the remaining spices add 1 tsp. turmeric, which is more needed for color.
- At the end, add a pinch of black pepper and start chopping. First, mix everything thoroughly, then we begin to knead the spices with a pestle. 1/2 tsp can also be added to spices. granulated garlic and still mix well. Grind the dried paprika or tomato especially carefully. They should be as small as possible. Homemade seasoning for pilaf is ready. It can be transferred to a small jar and stored for more than one month, tightly closing the lid. You can also make a homemade condiment reminiscent of Suneli hops, which is also ideal for pilaf. To do this, send 1/2 tsp to the mortar. coriander and marjoram. Also, add 1 dried basil leaf, half a bay leaf, which must be broken into small pieces, in a mortar.
- For homemade seasoning for pilaf, 1/8 teaspoon will also be required. fenugreek, but you can add more or less if you wish. In a mortar we send half a teaspoon of granulated garlic, a pinch of ground red pepper.To add flavor to the seasoning, add 1 leaf of sage, a quarter of a teaspoon of dried cilantro. To taste and desire, you can send a small amount of crushed mint into the mortar. At the end, add 1-2 saffron stamens and begin to grind everything with a pestle directly in a mortar to a powdery state. Be sure to add 1 sprig of dried or fresh dill and parsley to the seasoning. A seasoning reminiscent of Suneli hops is ready. Such a quantity of ingredients will be enough for a large pilaf pan.
- At home, you can also make a delicious mixture that resembles curry. To prepare it, it is better to use a coffee grinder. We send to the coffee grinder 1 tsp. coriander, 1/2 tsp turmeric and 1/8 tsp fenugreek. Season with a pinch of red hot pepper. Grind all spices well or knead the pestle in a mortar. You can supplement the taste of the finished seasoning by adding a pinch of ground ginger, cardamom, caraway seeds. We also send 2-3 fennel seeds, 1 clove hat and a pinch of cinnamon to the coffee grinder for the main ingredients. Grind everything again to make a powdery spice. At will, to diversify the taste of seasoning for pilaf, reminiscent of curry, you can use a pinch of ground mint. Homemade seasoning is much more aromatic and rich than purchased.
- You can cook pilaf with the addition of a mixture of herbs, which can be done at home. As a basis, such a mixture is used: 1/2 tsp. oregano, ground marjoram and thyme. Also be sure to add 2-3 leaves of dried basil. We knead all spices well. If you want to make a French mixture of herbs for pilaf, then add rosemary, sage, lavender petals, tarragon to your taste.
