Ingredients
- leek - 1 pc.

- kohlrabi cabbage - 250-300 g
- celery - 150-200 g

- semolina - 100 g
- cream - 100-150 ml
- wheat flour - 150 g
- salt to taste
- cloves - 3 pcs.
- vegetable oil - for frying
Step cooking
- Put a small pot of water on the fire and wait for the water to boil. Further in this pan you will boil vegetables for cutlets. Take the celery root and peel it, you will need about 150-200 g of celery. Then cut it into small pieces and put in boiling water.
- 250-300 g of kohlrabi cabbage should also be peeled, and then cut into large cubes. To taste, such a cabbage is very similar to white cabbage. Sliced cabbage send cook to celery.
- 1 medium onion, too, cut into not too small pieces and boil with other vegetables.
- Now the vegetables should be slightly salted and put 3 pcs. carnations. The approximate cooking time for vegetables is 15-20 minutes.
- While vegetables are boiled, you can make leek sauce. To do this, you will need to thoroughly rinse the onions, and then chop its white and green parts.
- Put a frying pan with oil on a fire and heat it well, then pour leek in hot oil. Fry the onion until black.
- Boiled vegetables must be turned into minced meat, so strain them through a colander or sieve, and then crush until mashed. For convenience, you can use a hand blender.
- In the resulting minced meat, add 100 g of semolina and mix. Also grate half the large carrots in coarse grains with semolina.
- Form vegetable patties by dipping your hands in water, and then dip the patties in flour. Fry vegetable patties in preheated vegetable oil until golden brown.
- Since semolina is present in cutlets, it does not have time to fully cook, so after frying the cutlets they must be cooked in the oven. Preheat the oven to 220 degrees, put the patties on a baking sheet with parchment and bake the dish for another 10-12 minutes.
- You will need a fresh cucumber to decorate the dish. Cut the vegetable into thin slices using a special knife, and then, combining 2 slices in parallel, roll them diagonally with a tube.
- Mix well-fried leeks with 100-150 ml of cream and mix until smooth. Do not rush to pour all the cream at once, you should get a fairly thick and porridge-like mass. Put this mass on a plate for serving, forming 3 small slides, and then put ready-made vegetable patties on these slides.
- Put the wrapped cucumber on top of the baked cutlets and serve the dish to the table.
