Step cooking
- Pour warm water (300 ml) into a deep bowl, put fresh yeast (25 g) and mix thoroughly with a whisk to dissolve completely.
- Add salt (0.5 tsp), sugar (0.5 tbsp) and mix again.
- Next add vegetable oil (100 ml).
- Stir and portioned add sifted flour (600 g), kneading the dough. It should turn out soft and elastic. Therefore, it is necessary to add flour in small portions.
- Add about 15 ml of butter to the dough and continue kneading the base for the cake for about 10 minutes.
- Cover the bowl with the dough on top with a clean towel and leave it in a warm place for 30-45 minutes. It should rise in volume by about 2.5 times.
- Then the dough must be well kneaded to release carbon dioxide, cover with a towel again and left in a warm place for 40 minutes.
- The resulting dough must be divided into two parts - one should be larger and the second smaller.
- Roll out most of it into a large layer.
- Grease a baking sheet with vegetable oil and put a layer on it. It should cover the entire pan. Thus, the lower part of the pie is formed.
- Peel potatoes (3 pcs.) And onions (1 head), rinse in water, cut into small strips and transfer to a deep bowl.
- Add salt (0.5 tsp), pepper to taste, olive oil (1-2 tbsp.) And mix everything.
- Peel red fish (700 g) from skin and bones, rinse thoroughly in water, add salt (0.5 tsp) and ground pepper to taste.
- Spread potatoes with onions evenly on the bottom layer of dough, prepared fish on top, leaving gaps with potatoes.
- Roll out the rest of the dough with a rolling pin into a thin layer, put it on top of the fish and carefully pinch the edges so that the filling does not flow during baking.
- From above, using a silicone brush, grease the cake with olive oil, make two holes in the middle to let out steam, and send it to the oven, heated to 190 °, for 50 minutes.
- Pull out the finished baked goods from the oven, cover with a clean kitchen towel, and leave for 10-15 minutes.
- Cut the pie into portions, transfer to a convenient dish, and can be served. Enjoy your meal!
