Step cooking
- Rinse well 1 cup of pearl barley and soak for 1.5-2 hours in water, then rinse thoroughly again, put in a saucepan, pour 2.5 liters of water and set to simmer on medium heat.
- We peel and wash 2 large potatoes, cut them into cubes of the usual size. We send them to the pan with pearl barley when the water has already boiled, and cook for 20 minutes.
- Rinse and peel from inedible elements 1 large onion and 3 medium carrots. Cut the onions into small cubes, and rub the carrots on a medium or large grater. In a pan, heat 20 ml of vegetable oil and fry the onion first until light transparency, and then the carrots to a soft state.
- In small cubes or circles, cut 6-7 small salted or pickled cucumbers. Add them to the carrot and onion frying at the very end.
- When 20 minutes have passed, and the pearl barley with potatoes will be ready, send the frying to the pan and mix all the ingredients thoroughly. At the same time, add 2 bay leaves, to taste salt, a mixture of various peppers and other spices to your taste.
- Let the soup boil for a couple of minutes under the lid and remove from the stove. Finely chopped greens are sent to a plate with a serving of soup. Also, sour cream is perfect for decoration.
Important! So that the potato gives the soup a lot of nutritious broth, do not put it to boil with pickles: in an acidic environment, the potato retains its shape.
