Step cooking
- To prepare the cutlets, you need 1 cup of buckwheat. Croup must first be sorted out so that garbage does not come across in the finished dish. Transferred buckwheat to a sieve and rinse several times under running water. We put the washed buckwheat in a small pan and pour 2 cups of cold water.
- Salt buckwheat, adding about half a tablespoon of table salt, and put the pan on the stove. First, turn on the medium heat, and after boiling, reduce it to a minimum and cook until the buckwheat completely absorbs the liquid. After that, remove the pan from the stove and leave the buckwheat to stand for 15 minutes under a closed lid, so that the porridge reaches full readiness. Cook stands under a closed lid.
- Champignon mushrooms can be taken in any quantity, depending on taste and availability. This recipe uses 400 g of champignons, which are pre-washed. Cut the mushrooms into small cubes.
- Peel the onion and cut into small pieces.
- Grind carrots with a coarse grater.
- Heat in a pan 2-3 tbsp. l vegetable oil. When it warms up well, spread the chopped onion, frying it for 2-3 minutes until transparent.
- Following the onions, we send the grated carrots to the pan. Fry vegetables together for 2-3 minutes. At the end, add the cubes of mushrooms. Fry until cooked and dry minced meat. When frying, mushrooms secrete a lot of juice. Cooking ingredients is required until the mushroom juice has completely evaporated. Do not forget to stir the food so that the filling for cutlets does not burn.
- Put the fried vegetables in a deep bowl. Add boiled buckwheat to them. For the preparation of cutlets, you can use not only freshly cooked porridge, but also the one that has already stood for several days in the refrigerator.
- In order to form meatballs from minced meat, it is necessary to grind everything with a submersible blender. It is not necessary to grind to a homogeneous consistency, it is enough just to walk slightly with a blender so that the mince becomes sticky and the patties are well formed.
- If necessary, add minced meat, adding about 1/2 tbsp. l table salt. If you cook non-lean cutlets, then you can beat the egg into the minced meat and, if necessary, add a little flour. If you have too thin minced meat, add some grated potatoes.
- We form small cutlets from minced meat. We roll all the formed patties in breadcrumbs.
- Pour 1-2 tbsp into the pan. l vegetable oil and fry the patties on both sides until golden brown. Turn the patties carefully so that they retain their shape and do not fall apart.
- Buckwheat cutlets are ready. You can serve them yourself or as a complement to the main dish, for example, any soup.
