Step cooking
- First, prepare the dough for the donuts. We put the stewpan on the fire, pour 150 ml of milk there, warm it up a little, add one tablespoon of sugar. When the mixture is well warm, turn off the heat.
- Knead 15 grams of yeast in a separate bowl, pour 75 ml of warm milk, whisk quickly with a whisk until the yeast and sugar are completely dissolved.
- We put aside the yeast mass, let the yeast dissolve, do their job.
- To the remaining 75 ml of warm milk, add 50 g of butter, keep on fire until the butter has completely dissolved.
- Sift 320 grams of wheat flour through a sieve over a small container.
- Add two egg yolks and one pinch of salt to the flour.
- Here we pour melted butter with milk and a mixture of yeast and sugar.
- We mix everything with a kitchen spatula for a short time, so that the dough hangs on the spatula, and then falls down.
- We spread the dough on the table, previously sprinkling it with flour, knead the dough, stretching it a little and turning inward until it becomes elastic.
- We take a clean bowl, sprinkle flour on the bottom, put the dough in it, cover the bowl with cling film, and send it to a warm place for an hour and a half, until it doubles or triple.
- While the dough is melting, we’ll prepare a chocolate filling for the donuts. Pour 250 ml of cream of fat, 4 tablespoons of liquid honey into the stewpan. Gently bring to a boil.
- Cut into small pieces 250 grams of dark chocolate, place it in a separate container.
- Add 60 grams of butter, and then pour the boiled mixture of honey and cream into it.
- Quickly mix the chocolate with a mixture of honey and cream and butter, we get a bright chocolate mass.
- Now whisk the mixture with a whisk to get an airy, uniform, light filling for donuts.
- We put it in the refrigerator for cooling, and we return to the test. We spread it on a table sprinkled with flour, roll out a layer one and a half centimeters thick, divide it into strips, and then these strips into small rectangles.
- We spread them on a cutting board, covered with parchment, so that they fit within 30-40 minutes.
- Pour vegetable oil into a deep pan so that it occupies one third of the volume of the pan, heat it over high heat, place donuts in four pieces, and fry on both sides.
- In a separate container, mix one tablespoon of sugar and one tablespoon of maltose.
- Put the fried donuts in this mixture, sprinkle them on all sides, shake off the excess mixture, put the donuts on a flat dish.
- They can already be eaten, but try to fill the donuts with chocolate filling.
- To do this, we take it out of the refrigerator, put on the culinary bag on our hand, do not forget to insert the nozzle, put the filling in the bag.
- Each donut, while it is warm, is pierced with a nozzle and filled with chocolate mixture until we see that the filling starts to climb up.
- We spread the donuts on a flat dish, we can serve for tea.
