Step cooking
Kneading dough
- Pour 250 ml of kefir into a deep bowl. Add 1 teaspoon of soda without a slide, ¼ teaspoon of salt, about 1 g of vanillin (you can replace ½ teaspoon of vanilla sugar), 1 egg, 5 tablespoons of sugar and 3 tablespoons of vegetable oil.
- Mix everything with a spoon. Sift the wheat flour (600 g) into a separate bowl and gradually add to the kefir in portions and knead the dough. Flour may need 550 g or 600 g. It all depends on the quality of the flour.
- Knead the dough first with a spoon. When the dough is gathered in one lump, continue to knead it with your hands. Knead until the dough stops sticking to your hands. If after 5 minutes of kneading the dough does not stop sticking to your hands, add a little bit, just a little bit, literally a tablespoon of flour until the dough ceases to be sticky. The dough should be soft and elastic.
- As soon as the dough stops sticking to your hands, put it on a table covered with a silicone mat and knead it very carefully. Do not overload the dough with flour. Ready dough should be soft and pliable.
- We cover the finished dough with cling film and give it a rest for about 5 minutes.
Donut cutting
- The dough rested, proceed to cutting donuts. We roll out the dough into a layer of approximately 5-7 mm thickness and form donuts.
- Cut out a glass with a glass. Then we cut out a plastic stopper from sparkling water in the center of the circles of the hole. We collect the scraps of dough in one lump, give the dough a little rest, and repeat the donut molding procedure.
Frying donuts
- With the cutting managed. Now you can start frying donuts. In a deep frying pan over medium heat, heat about 0.5 liters of vegetable oil. We check the oil heating with a small piece of dough. Throw the dough into the butter: if the dough pops up quickly, then the butter has already warmed up enough and you can start frying the donuts.
- In small batches, dip the donuts in oil and fry them until golden brown on both sides. Donuts are fried over medium heat so that they do not burn and bake well.
- When the donuts are well browned on both sides, we take them out with forceps on a paper towel in order to remove excess fat. When the donuts have cooled slightly, sprinkle them with icing sugar, and with the heat of the heat, you can serve donuts to the table.
