Step cooking
Knead the dough
- On a small fire, heat 500 ml of milk and 125 ml of water to a warm state. Pour warm liquid into a bowl for kneading dough.
- We send 11 g of dry yeast there and mix the ingredients well.
- Then pour 20 g of granulated sugar and again alter the mixture.
- We place the bowl with the dough in a warm place for 10-15 minutes, so that the yeast activates.
- After this time, we break into the yeast mass 2 chicken eggs.
- There we add 125 ml of pre-melted and slightly cooled butter, 10 g of salt, 40 g of granulated sugar and 1 packet of vanilla sugar.
- Beat the mixture with a whisk or a spoon until a homogeneous consistency is obtained, while trying to dissolve grains of sweet components as much as possible.
- Separately, we pass through a fine sieve 1 kg of premium flour. Add the sifted flour to the milk-yeast mixture and stir the dough thoroughly with a spoon.
- Then we continue kneading manually. The dough should turn out to be of medium consistency, that is, not too elastic and not too soft.
- We cover the dough with a towel, and then transfer it to a warm place for an hour and a half. This time should be enough for the dough to double in size.
We make donuts
- We approach the dough slightly with hands, and then divide it into two equal parts.
- Each piece is rolled into a round layer with a thickness of not more than 1 cm.
- Using a cup or glass, we cut out neat circles on a sheet with a diameter of 6 to 8 cm.
- In each round billet, cut out the middle using a plastic bottle cap or a small glass. This way you get the shape of a classic donut.
- We cover the baking sheet or the surface of the table with baking paper, and then spread the formed donuts on top of it.
- We cover the donuts with a kitchen towel or cling film, after which we leave them to “rest” for 20-30 minutes.
Fry products
- In a pan with a thick bottom and high sides, pour 800 ml of refined sunflower oil. Heat the oil over medium heat almost to a boil. Gently lower the donut blanks into the hot oil, then fry them on both sides until a beautiful golden hue appears. Usually this color is achieved in 2-3 minutes.
- Put the finished donuts on a paper towel to get rid of excess oil. Sprinkle the cooled products with plenty of icing sugar.
