Step cooking
The first step is to choose the right tomatoes for the juice. When buying vegetables on the market, we pay attention to the fact that they are not fleshy, since we get little juice from them. You should choose those tomatoes that have less pulp inside, and when cut, you can see how immediately they secrete juice. These are large tomatoes, which are called "tomato" in the market.
- When tomatoes are selected for juice, wash them under running water, dry them a little. Cut the tomatoes into pieces, remove the place for the stalk. For tomato juice, we need about 1-1.5 kg of tomatoes. We install the juicer and pass the selected tomatoes through it. The juicer can be used both manual and automatic
- For harvesting, we select small, hard, without any flaws tomatoes. We wash them under the tap, give time for drying, then put them in a jar. Do not stack vegetables too tightly. One liter jar should be sterilized.
- Add one bay leaf, 2-3 peas of black pepper, 3-4 cloves, on the tip of a teaspoon of coriander to a jar of tomatoes. Bring the water in the teapot to a boil and fill the tomatoes with boiling water, cover the jar with a lid and leave it on the table until the water has cooled completely - this is about 20-25 minutes.
- Now we put on the stove a pan with tomato juice, let it boil, cook for 5-7 minutes on medium heat. Add about one tablespoon of salt and the same amount of sugar at the end of cooking. This is based on one liter of tomato juice. Be sure to taste the juice: it should be saltier and sweeter than usual, as the tomatoes will take on part of this taste.
- The jar filled with boiled water tomatoes has already cooled down. We drain the water from the can, immediately pour the boiling tomato juice into it.
- We cover the jar with a lid, roll it up, turn it upside down, wrap it until it cools completely. After that, you can store the workpiece in the basement or just in the closet.
Useful Tips
- If you pass tomatoes for juice through a manual juicer, then the waste after them remains very wet. Therefore, you can skip them again, you will get some more juice.
- For such a preparation for the winter, use tomatoes of small varieties, very good cream for this.
- Pour the tomatoes with pure tomato juice, seedless, their presence in the fill is not allowed.
