Ingredients
- Water - 1 L
- Salt - 1 tbsp. l
- Sugar - 5 tbsp. l
- Citric acid - 1/3 Art. l

- Tomatoes - 2-3 kg
Step cooking
- First, thoroughly rinse the tomatoes and put them on a towel to get rid of excess fluid. According to this recipe, you can roll up tomatoes in banks of any volume. From the specified amount of ingredients you can prepare 1 liter of brine. For comparison, a three-liter jar will need approximately 2.5 liters of brine. In this case, all the ingredients must be multiplied by 2.5. Cans can not be sterilized, but it is advisable to boil the lids.
- At the bottom of the can, put the right amount of cloves, peppercorns and allspice. So that the tomatoes do not burst when pouring boiling water, they can be pierced with a fork at the base near the stem. Prepared tomatoes are packed tightly in jars.
- Next, pour water into the pan and bring it to a boil. After that, gradually pour cool boiling water into cans. This should be done gradually so that the bank does not burst due to a change in temperature. We cover the banks with lids and leave for about 10-15 minutes. Then we drain all the water from the cans. This is most conveniently done using a nylon cap with holes.
- For brine, you can use drained water or take clean. Next, add salt, sugar and citric acid. Mix and set on fire. Bring to a boil and let it boil for a few minutes. Make sure that salt and sugar are completely dissolved.
- Pour the hot marinade into the cans, cover them with lids and roll them up using a seaming machine. Also, if desired, you can use cans under the rotary covers. Turn the rolled can upside down and check for leaks. No liquid should protrude on the lid. After this, we wrap the jar with a warm blanket or coverlet and leave it to cool completely. It is advisable to store such tomatoes in a cool dark place. Marinade is also edible. Enjoy your meal.
