Step cooking
- Tomatoes of any size are suitable for this recipe, since we will preserve them in halves or slices. First, peel the two medium onions from the husks and cut into rings.
- Next, thoroughly wash and dry the tomatoes. Large tomatoes cut into slices, and small enough to cut in half. Be sure to cut the stem.
- After that, wash the banks. This is best done without the use of detergent, using baking soda. Also, banks must be sterilized. This can be done by baking the jars for several minutes in the oven or microwave at maximum power, and, if desired, you can use the water bath. The lids need to be boiled.
- Peel 6 cloves of garlic from the husk. It is advisable to rinse the peeled garlic in order to remove all possible dirt from it. At the bottom of each jar, lower 3 cloves of garlic. Also in each jar add 2 washed bay leaves, 1/2 tsp. black pepper peas, 1/2 black allspice.
- We cut the hot peppers into rings, without taking out the seeds, and divide it into two banks. If you like spicy dishes, you can take more peppers. Optionally, it can not be used at all.
- Next, we begin to spread the chopped tomatoes into jars, alternating them with onion rings.
- Then we spread the washed greens of parsley and dill and on top we lay another layer of tomatoes and onions. All ingredients can be stacked in random order. Top with the remaining onion and a little more dill.
- Next, you need to prepare the marinade. Pour 1 liter of water into the pan and put it on the stove. Add to the water 3 tbsp. l sugar and 1 tbsp. l salt. Mix and bring the marinade to a boil. After the marinade has boiled, add 50 ml of vinegar 9% to it. Mix again, and as soon as the marinade boils, remove it from the heat.
- Then pour the marinade into the jars and immediately cover them with lids so that the vinegar does not evaporate.
- After that, pour a little warm water into the pan. Water must be warm, because we poured tomatoes with hot marinade. Put a towel at the bottom of the pan so that the jars do not touch the bottom, and carefully place the jars in the pan. Then we add water so that it reaches the shoulders of the can. Next, add 1 tbsp to each jar. l vegetable oil. Cover with lids and wait until the water in the pan boils. After boiling, reduce the heat and sterilize the tomatoes for 15 minutes.
- After 15 minutes, we take out the cans from the pan and, without removing the lid, immediately roll them up using a seaming machine. Then turn the jar lid down to check for leaks, and then remove the jars under a warm blanket until it cools completely. Store tomatoes in a cool dark place. Enjoy your meal.
