Step cooking
Make tomato juice
- First, carefully rinse with cold water from the tap 1-1.5 kg of tomatoes. It is best to use juicy, soft, watery varieties of pink or red tomatoes. For the preparation of juice pouring, it is completely allowed to use substandard vegetables: cracked, rotted, blackened and so on. We cut off the damaged areas, remove the stalk and cut the tomatoes into 3-4 parts, depending on the size. We send the tomatoes to the blender bowl, where we grind to a porridge-like state.
- We wipe the resulting mass through a fine sieve to get rid of large particles, peels and seeds.
Prepare the tomatoes
- Thoroughly rinse with running water about 3 kg of fleshy, dense tomatoes, and then wipe them dry with paper towels. These vegetables should be without any flaws, whole, fresh and ripened. In the area of the stalk we make several punctures with a toothpick or wooden skewer. This is necessary so that the fruits are well salted.
- Tightly put the tomatoes in a pre-sterilized one and a half liter jar, filling it to the very neck.
- Using a ladle, pour the tomatoes with boiling water, then cover the jar with a sterilized lid and leave it in this form for 3-4 minutes.
- During this time, the jars of vegetables warmed well and now drain the water into the sink.
Canned tomatoes
- Pour the resulting tomato juice into a suitable pan. There we add 30 g of salt, 40 g of granulated sugar, 1 bay leaf, 3 peas of allspice and 1 bud of cloves.
- Bring the tomato juice to a boil, and then immediately pour it over the tomatoes stacked in jars.
- We roll up the cans with lids and remove them in a warm dark place, turning upside down. We wrap the preservation in a warm blanket and leave it in this form for the night until the jars with contents have cooled to room temperature. We send canned tomatoes to a cool place for long-term storage.
