Step cooking
- In a pan of stainless steel or aluminum, pour 1 cup of sugar, fill it with water and mix. We measure the amount of water by eye - the consistency should be only slightly liquid, porridge-like.
- We put the pan on the stove, turn on the medium heat and bring the sugar mixture to a boil, constantly stirring it at this time. During cooking, remove the resulting sugar coating from the walls of the pan. This will prevent the formation of sugar crystals, which will be knocked out of a uniform glaze.
- The fudge will cook for 8-10 minutes, depending on the amount of water in it. We check its readiness by the principle of a soft ball: we immerse the icing in cold water and try to collect it in one ball - it should keep its shape and not spread out over the water. At the end of cooking, add 1 tsp to sugar syrup. lemon juice and vinegar and mix it.
- After turning off the fire, remove the pan from the stove and send it to a bowl filled with cold water to cool the icing quickly. Sprinkle on top of the future fondant with cold water so that sugar crust does not form. When the syrup cools down, take a mixer and beat it for 3-5 minutes until a viscous glossy mass of pearly white is formed. If the glaze settles during whipping, add a little water to it and continue whisking.
