Step cooking
- We take 500 grams of fresh pork liver, rinse it and cut into small pieces on a cutting board.
- Pour the chopped liver ½ cup of milk and leave the liver to infuse for about 40 minutes. Milk will make the liver much softer, more airy, and also remove the bitterness.
- After 40 minutes, carefully drain the milk from the liver through a kitchen sieve.
- On a gas or electric stove, put the pan in vegetable oil to warm up. When the oil warms up well, put the beef liver in it and fry over medium heat.
- After 2 minutes, salt and pepper the liver to taste and mix thoroughly with a kitchen spatula.
- While the liver is fried, we chop 1 medium onion into cubes and rub 1 medium carrot on a coarse grater.
- As soon as the liver is fried on both sides, add chopped onions and carrots to it, mix thoroughly. Fry until onions and carrots are soft, it takes an average of 4-5 minutes. The liver cooks very quickly, so it’s not necessary to overcook it.
- Next, take 1.5 tablespoons of flour and put it in a free place in the pan, mix with a kitchen spatula a couple of times and then mix with the liver and onions so that the flour is well absorbed in the future gravy.
- We take 250 milliliters of pure water and slowly pour it into the liver, mixing thoroughly. Leave about 60 milliliters of water.
- When a dense mass is formed, add 2 tablespoons of sour cream and a slide to it and mix thoroughly and add the remaining 60 milliliters of water. Mix well. It is better to take sour cream not too fat.
- Once again, add salt and pepper to taste to taste, as we added water and sour cream to it.
- Reduce the heat to the very minimum and leave to boil for 5-7 minutes, this will be enough. We cover the pan with a lid, turn off the heat and let it simmer there for another 5 minutes, it does not need to be stirred.
- Gravy is ready, you can serve it as a side dish for potatoes, buckwheat or rice, it will be very tasty! Enjoy your meal!
