Step cooking
- We take 500 grams of fresh beef liver, rinse it and cut into small pieces with a sharp knife.
- Next, we remove 1-2 onions from the peel and first cut in half, and then again in half, that is, quarters.
- While we chop the onion, you can put it on a gas or electric stove to heat the pan and pour a little vegetable oil into it. In a preheated pan, put the chopped onion over medium heat until a transparent shade, stirring occasionally.
- While the onion is fried in a pan, you can begin to prepare the gravy for the liver. Take 2 tablespoons of sour cream with a slide, 1 tablespoon of tomato paste and mix well with a spoon.
- Add about 1 cup of boiled water and mix everything carefully.
- When the gravy is mixed with water, add 2 tablespoons of flour to it, so that it is a little thicker.
- Pour the finished onion into a separate plate, and pour the chopped beef liver into the already hot pan and fry for 10 minutes. When 7 minutes pass, the liver must be salted to taste. This is not worth doing right away.
- We also add fried onions and sour cream with tomato paste. Mix everything well, add spices and simmer over low heat to a boil. After boiling the gravy, you can salt it a little and leave to simmer for another 7 minutes under the lid.
- The liver is ready, you can serve it as a side dish or an independent dish. Enjoy your meal!
Tips
- Always prefer a fresh liver rather than a frozen one. Thus, it will be much easier to determine the quality of the product.
- Beef liver resembles ripe cherries in color, it should be red-brown in color.
- The smell of a fresh liver is always sweet and pleasant. If you heard any extraneous odors, then it is better to refrain from buying such a liver.
- The surface of the product should be free of damage, scratches, smooth and shiny.
- Before you start cooking, be sure to remove the film that is present in any liver.
- If you see bile ducts on the liver, then they must be removed so that the finished liver is soft and without a tasteless bitterness.
- To make the liver soft, it can be soaked for 30-40 minutes in cold milk.
