Step cooking
- Wash 1 kg of chicken. Wash, peel vegetables: 2 medium onions, large carrots, a slice of zucchini (200 grams), a portion of eggplant (100 grams), a small bell pepper (100 grams). For the beauty of the dish, take red pepper. Cut the chicken into pieces of approximately 1.5 cm × 2 cm. You can cut it into strips or small slices, this is a matter of taste. For gravy, you can also use other parts of the chicken carcass: breast fillet or chicken legs. From the fillet of gravy it turns out a little drier, requires additional introduction of fat during stewing.
- Cut into medium cubes two peeled onions. You can choose another method of grinding: strips, pieces, half rings. Cut the carrots in half along the root crop, chop into thin half rings.
- Also grind the eggplant and zucchini with medium-sized cubes, approximately 1.5 cm × 1.5 cm.
- Pour 50-60 ml of vegetable oil into a thick bottom pan. Heat well over medium heat.
- Put chicken pieces in a frying pan, fry when stirring for 5 minutes.
- Add sliced onions and carrots to the meat, continue to fry for another 3 minutes.
- Put in the pan cubes of zucchini and eggplant, mix the mixture with a culinary spatula. Cover. Reduce heat to small, simmer for 7-10 minutes.
- After 7-10 minutes, remove the lid, put the bell pepper to the mixture. Cover again, simmer another 5 minutes.
- Remove the lid, add 1 teaspoon of dried or frozen basil. You can put fresh greens of dill, parsley or dry spicy herbs.
- Pour 200 ml of cream with a fat content of 10% into the pan. Instead of cream, you can use fat milk.
- In a cup, put 1 teaspoon of potato starch with a slide. Add 150 ml of water, stir well. You can also take corn starch or wheat flour, if for some reason potato starch is not suitable for you.
- Pour the mixture into a frying pan with a thin stream, continuously stirring the contents with a cooking spatula. Reduce the heat under the pan to a minimum, cover, simmer for 7-8 minutes. After this time, mix the gravy. Stew for another 7-8 minutes, covered. Try the gravy on readiness, if necessary - add salt, stew more.
Chicken gravy is used as meat for pasta, mashed potatoes, cereals. When preparing this dish, you can use a variety of vegetables: tomatoes, cauliflower or white cabbage, broccoli, asparagus beans, and other products. Black pepper, garlic, bay leaf, tomato paste, butter, hard cheese, and other ingredients are added to the gravy.
