Step cooking
- To get started, prepare rice. Send it into a deep bowl, fill it with water, mix and drain it. We do this several times until the water becomes clean. Fill the pilaf with water and set aside for a while.
- Be sure to add a little fat to the pilaf. It can be chicken or pork. But since today we are cooking pilaf from chicken, take 100 g of chicken fat, cut it into small pieces, put it in a pan and put it on a small fire.
- While fat is being cooked, wash the chicken fillet, cut it arbitrarily, in small cubes.
- We clean two onions, wash under running water, cut into half rings.
- After the fat has melted, we send the chopped fillet into the pan, mix everything and fry for 5-7 minutes.
- We peel two carrots, my, cut into small cubes. We send the carrots with onions to the pan with meat, mix, cover. Let it simmer for 15 minutes over low heat.
- After this time, remove the lid, add salt to taste and spices. Spices can use any of your choice. It can be a mixture of spices for pilaf, or you can take coriander, zira, black pepper, cloves separately. Mix everything, cover and leave to simmer another 5 minutes.
- Put the stew with vegetables in the pan, form an even layer. Spread the rice on top, also level it.
- We clean 6 cloves of garlic, wash with a fork on each clove, make cuts and drown each in rice. So garlic will give its flavor better.
- To maintain the integrity of the coating, we take a slotted spoon and pour 700 ml of water through it from above. Water should cover the rice with about 2 fingers.
- We send the pan to the fire. It is better to put on a flame divider so that nothing burns. Bring to a boil, make the fire small and cook for about 25 minutes until rice is fully cooked. Do not mix pilaf during cooking. Only after full readiness can you mix.
- When the pilaf is ready, pour it into portioned dishes and serve as a completely independent dish. If desired, you can sprinkle with chopped herbs.
