Step cooking
- First of all, you need to defrost puff pastry. To do this, remove it from the freezer and leave it at room temperature for several hours. Cook the cream. Remove the zest from the lemon, it will take 1 tsp. Take a saucepan, pour 200 ml. milk, add ¼ tsp. cinnamon, lemon zest and bring everything to a boil. In a separate container, mix 100 ml of milk with 1 tbsp. l vanilla pudding. Mix well and add 35 g of wheat flour previously sifted through a sieve, mix until smooth. Pour the resulting flour mixture in a thin stream, stirring constantly, pour into boiled milk. Continue to keep the mixture on medium heat until it thickens a little.
- Make sugar syrup. Mix 100 ml of water with 200 g of sugar, put on medium heat. Stir the sugar crystals to dissolve and bring to a boil.
- Pour the syrup into the milk mass, mix well until smooth. Remove from heat and let cool to about 50 degrees. Strain the resulting mass through a fine sieve. After that, it will become smooth and uniform. Take 4 eggs and separate the whites from the yolks. Try to prevent squirrels and flagella from getting into the yolks. Whisk the yolks with a whisk, they should lighten. Take whipped yolks into strained mass, mix thoroughly. The cream is ready.
- Divide the puff pastry into 3 equal rectangles about 10 by 24 cm in size. If the dough sticks to the surface, sprinkle it with a little flour.
- Fold the dough on top of each other and twist into a tight tube. Cut the dough into pieces 2 cm wide.
- Take the paper molds, distribute the dough in them so that you get a basket. It will be easier to do if each piece of dough is preliminarily rolled out with a rolling pin.
- Fill each mold with pastry cream prepared in advance.
- Place the baking tray with the cakes in the oven preheated to 220 degrees and bake for 25-30 minutes. Remove the cakes from the oven, put on a plate and let cool completely. Enjoy your meal.
Cooking and Serving Recommendations
- Cinnamon in the filling, can be replaced with vanilla sugar or other spices. Instead of lemon peel, you can add orange.
- For chocolate lovers, you can add 10-15 g of cocoa powder to the filling, replacing them with the amount of flour.
- Between layers of puff pastry, you can sprinkle a small amount of cocoa powder, thus giving your cakes a chocolate flavor and a beautiful cut.
- Serve the cakes, garnishing them with crushed, toasted nuts, fresh berries or slices of chopped fruit and a leaf of fresh mint.
