Step cooking
- We take five eggs and separate the squirrels from the yolks. We do this very carefully so that the yolks do not get to the squirrels. Beat the whites with a mixer in a thick foam. In three sets, add three glasses of sugar and continue to whip the mass. Before adding the last portion of sugar, add 0.5 tsp. citric acid. Beat the proteins until stable peaks will take about 10 minutes. Add 5 drops of lemon essence here and mix.
- We cover baking sheet with parchment paper. We spread the meringues in a pastry bag and put on the “star” nozzle. With light circular movements, we plant the meringues on a baking sheet, making an oblong shape. We send the pan to the oven, heated to 80 degrees, bake for an hour. During this time, prepare the cream.
- Pour 200 ml of water into a pot or stewpan with a thick bottom, pour 250 g of sugar and let it boil, stirring occasionally to make the sugar melt faster. Remove from heat and let cool. To cool the syrup as quickly as possible, pour cold water into a deep bowl and put a saucepan with syrup in it. We take 125 g of butter in advance from the refrigerator. We need the oil to become room temperature. Oil can be used in stores or homemade of any fat content. The main thing is that it is fresh, high-quality and tasty, since the taste of the cream depends on it.
- Beat the butter with a mixer and add the cooled syrup in small portions. Add 4 drops of vanilla essence to the cream, mix everything. If there is no essence, you can immediately mix a bag of vanilla sugar with sugar. When the meringues are ready, we take them out of the oven, let cool. Then carefully remove from the baking sheet so that they do not break. In the pastry bag with the nozzle "little star" we spread the butter cream. Grease one baked meringue with cream and glue it with a second meringue.
- It turns out a cake of two halves glued with butter cream. Cakes can be decorated. To do this, melt the chocolate and pour them cakes.
Cream for meringue cakes can be anything. You can mix boiled condensed milk with butter or make any other of your choice. The size of the cakes can also be adjusted independently. If you want a brighter dessert, add food colors of any color to whipped meringue.
