Step cooking
- We start making the pies by kneading the yeast dough. Pour 250 ml of milk and water into a metal bowl. We put the pan on the stove and heat it a bit, without bringing to a boil. The temperature of the liquid should be 36-37 degrees. You can measure the temperature with a kitchen thermometer or by dipping a finger in the liquid.
- In warmed milk and water, dissolve 40 g of raw yeast. We crumble them a little and put them in a bowl. Stir the ingredients thoroughly with a tablespoon.
- In the mixture add 1 tbsp. l salt and 1/2 tbsp. l Sahara. Continue to mix well. Yeast, sugar and salt should completely dissolve.
- Add 1 chicken egg to the metal bowl with milk and yeast and stir again.
- Pour 2 tbsp. l sunflower oil, stirring with a spoon.
- 1 kg of sifted flour is gradually added to the liquid mixture. Add it in portions, regularly kneading the dough with your hands in a bowl. First, mix everything with a tablespoon, then with your hands.
- When the dough becomes thick and it is inconvenient to knead it in a bowl, put it on the table, lightly sprinkled with flour. Top the dough also should be sprinkled with sifted flour and knead thoroughly.
- If the finished dough still sticks to your hands, then you need to grease them with a little vegetable oil. The dough should not be thick, do not beat it with flour.
- Lubricate the walls and bottom of the pan with vegetable oil and transfer the finished dough into it. Cover the pan with a towel and let the dough rise for about 30-40 minutes.
- At this time, we are preparing the filling for the pies. Boil 9 chicken eggs in a pan in advance and let them cool. Cut the eggs into small cubes and put them in a deep bowl.
- Wash a bunch of green onions and finely chop. Add chopped onion in a bowl with eggs.
- In a separate pan, boil 100 g of rice and add it to the rest of the filling. All products mix well. Stuffing is required to salt to taste.
- In a microwave oven, melt 90 g of butter and add to the filling, re-mixing it.
- We crumple the approached dough for pies, cover with a towel and let it stand for another 30 minutes.
- After the second raising of the dough, we proceed to the preparation of the pies. Sprinkle a little flour on the table and tear small pieces from the total mass of the dough, from which we form balls.
- We give each piece of dough a round shape, rolling it a little with hands or a rolling pin. In the middle we spread 2 tbsp. l toppings.
- Wrap a pie. Then we knead it a little in hands to hide the seam and it did not split. Similarly, we form the remaining pies from the remaining dough.
- We transfer the finished pies to a baking sheet, greased with a little vegetable oil. Put the pies on a baking sheet with the seam down.We leave the pies in a warm place for a quarter of an hour so that they can distance.
- Shake the yolk in a separate bowl and grease them with pies using a silicone brush.
- Preheat the oven to 180 degrees and bake pies for 10 minutes. We take out the finished cakes from the oven and serve them to the guests. The dough is soft and ruddy on top, and the filling is juicy and tasty.
