Step cooking
- Cooking yeast dough for pies. We heat 500 ml of milk so that it is warm, about 37-40 degrees, no more, no less. Pour it into a deep bowl. Add two tablespoons of dry yeast, mix with a whisk until completely dissolved, then pour four tablespoons of sugar. Mix everything thoroughly until smooth, begin to knead the dough.
- We place a sieve over a bowl of liquid, pour flour there, adding two and a half teaspoons of salt to it, sift these ingredients, then whisk the dough with a whisk, gradually add the flour. When it becomes difficult to stir the dough with a whisk, put it on the table, after sprinkling it with flour. Add vegetable oil to the dough, grease hands well with oil and continue to knead the dough until smooth. The dough should turn out soft, smooth, elastic, easily separated from the hands and from the table.
- Lubricate a deep bowl with vegetable oil, give the dough a slightly spherical shape, place in a bowl, cover with cling film and send to a warm place for an hour and a half. While the dough is suitable for the first time, we will prepare the filling for the pies.
- Two bunches of green onions under running water, finely chopped on a cutting board, removed to the side. In advance, boiled eggs in the amount of ten pieces are peeled. Grind in an egg slicer with strips first along, then across. We put a frying pan on the fire, pour quite a bit of vegetable oil, add 60 grams of butter to it, heat it and add green onions there. Stir the onion over low heat for four to five minutes, stir constantly, salt with a pinch of salt.
- When the onion becomes soft, add it to the chopped eggs, mix, salt to taste, add 1-2 pinches of ground black pepper - this will be the filling for the pies. We remove it to the side so that it cools down.
- Meanwhile, an hour passed after kneading the dough, it came up, increased three times. We take it out of the bowl, knead a little to remove carbon dioxide, put it in the bowl again and send it for another half hour to a warm place. After half an hour, the dough came up a second time. We take it out of the container, sprinkle the desktop with flour, lay out the dough, begin to form blanks for pies.
- Separate small pieces from the dough, form balls from them, put them on a table, cover them with a kitchen towel so that they do not get windy.
- At this time, you can turn on the oven so that it warms up well. Now we take the balls from the dough, which were formed first, they have already come up a bit. We make small cakes out of them with our palms. You can simply roll out a rolling pin. In each such cake we spread the filling. Its amount depends on the size of the cake and your preference. - We take out the baking sheet, cover it with parchment paper, lay out the formed pies, put them seam down.We cover the baking sheet with the prepared pies with a clean towel so as not to wind, we leave them to rest for 10-15 minutes, so that they come up a little. After this time, mix in a separate container 30 ml of milk and one egg yolk. With this mixture we smear the approached pies with a brush and send to the oven to bake for 30 minutes at a temperature of 200 degrees until a beautiful golden color.
- After 25-30 minutes we take out a baking sheet with pies from the oven, grease their surface with butter so that they acquire a glossy shade and become softer. Now let them cool and serve for tea.
