How to make a dough
- Crush pressed yeast (18 grams) into a deep bowl. When buying yeast, pay attention to the release date. The fresher the yeast, the better the dough.
- Add 1 tablespoon of granulated sugar, mix a little.
- Pour 120 ml of warm milk into a bowl (temperature 36-37 ° С). Shuffle.
- Pour 4 tablespoons of pre-sifted flour. Stir the composition with a cooking spatula until smooth.
- Tighten a bowl of dough with cling film, place in a warm place for 1-1.5 hours. Opara should rise with a cap of foam.
Cooking dough
- Pour 5 tablespoons of granulated sugar into another deep bowl, add vanilla sugar (8 grams).
- Break 2 chicken eggs into the sugar mixture.

- Lubricate a clean, deep bowl with vegetable oil (20 ml). Put the ball in a greased bowl, tighten with cling film. Put in a warm place.
- After 40-45 minutes, knead the dough. Tighten again with foil and return to heat.
- Repeat warming after another 40-45 minutes. Leave to approach for another 1-1.5 hours. This dough is called Viennese.
How to cook apple filling
- Wash and peel apples (1, 3 kg), cut out the core. Cut the apples into small pieces (approximately 0.7 cm × 1 cm × 1.5 cm). For the filling, it is better to take apples of hard varieties.
- Melt in a pan 30 grams of butter.
- Add granulated sugar (4 tablespoons), mix the mass.
- Put the sliced apples in the pan. Fry over high heat, gently mixing, 3-4 minutes. Pieces of apples should retain their shape (therefore, it is advisable to use hard varieties).
- Put the apples in a sieve, let the liquid drain. Put on a plate, cool the filling to room temperature.
Cooking and baking pies
- Take the approached dough from the bowl onto the cutting surface (table, silicone, plastic mat), knead.Divide the ball into 22-23 parts, weighing approximately 50 grams each.
- Mash a piece, give it a round shape. Make balls from all the pieces. Put the blanks on the mat, tighten with cling film. Let rest 10-15 minutes.
- Sprinkle the cooled apple slices to taste with cinnamon, mix.
- Free the blanks from the film. Stretch each piece of dough with your hands in a circle with a diameter of about 10-12 cm. Put a tablespoon of the filling in the center of the cake.
- Pinch the edges of the pie well. Smooth the resulting seam.
- Lay the pie seam down on a baking sheet covered with parchment paper. Form all the pies in this way. Transfer products to a baking sheet.
- Cover the baking sheet with cling film. Leave it in a warm place for 40-45 minutes so that the patties come up. Peel off the film.
- In a deep plate, beat with a whisk 2 chicken eggs until smooth. Brush the patties with the egg mixture using a cooking brush.
