Step cooking
- To prepare the filling for pies, you need 500 g of pumpkin. We clean it from the peel and cut it into cubes of medium size. It is also possible to use raw pumpkin grated on small or medium grater for pies.
- We grease the ceramic baking dish with 10 ml of vegetable oil, evenly distributing it along the bottom of the mold and the edges. We spread the pumpkin in the form and sprinkle 75 g of sugar (this is about 3 tbsp. L.). Preheat the oven to 180 degrees and put the pumpkin shape on the middle level. Bake the filling for 35-40 minutes, until the pumpkin is soft.
- We proceed to the preparation of the test for pies. To do this, pour 250 ml of warm milk into a deep bowl. Its temperature should be 36-37 degrees. In warm milk, add 25 g of sugar and 1 bag of dried yeast. Stir the ingredients thoroughly with a tablespoon. We put in a warm place to insist for a quarter of an hour.
- After 15 minutes, a cap forms on the dough, which indicates good yeast activity. Separate the yolks from 2 proteins and add the latter to the dough. We also add 100 g of sugar to the dough and mix all the ingredients with a whisk. Add 1 tsp. salt, repeatedly stirring with a whisk. Pour 250-300 g of flour into the dough gradually, stirring regularly with a whisk.
- After adding about half the flour, pour in 100 ml of vegetable oil and mix all the ingredients. Add another 100 g of flour and stir until the dough is sticky. Pour the remaining 50 g of flour onto the table and shift the dough. Continue to knead it with your hands. So that it does not stick to your hands, you can sprinkle them with flour a little.
- Put the dough in a deep bowl, sprinkle with flour a little on top. We cover the dish with the dough with a kitchen towel and let it stand for 60 minutes in a warm place. After an hour, the dough for pies is increased by 2-2.5 times. Sift about 50 g of flour through a sieve onto a table, spread the approached dough and knead it slightly with your hands.
- To make it easier to roll out the dough, it should be divided into 2 parts. We roll one part of the dough into a sausage, which we divide into 7 identical parts with a plastic knife.
- Each slice of dough is lightly dipped in flour and knead the dough with your hands, giving it the shape of a circle. It is also possible to roll pieces of dough with a rolling pin.
- Put the pumpkin filling on the rolled dough. It must necessarily be well cooled, because even if the pumpkin is slightly warm, it will negatively affect the structure of the dough. It is possible to combine pumpkin with apples, dryers and other ingredients to your taste.
- After filling with the filling, connect the edges of the dough and spread on the baking sheet with the seam down. First cover the baking sheet with parchment paper.
- Similarly, make pies from the 2nd part of the test.All pies laid on a baking sheet are recommended to stand for 30 minutes so that they become lush and more airy. In a separate bowl, mix 1 egg yolk and 15-20 ml of milk. Lubricate the infused pies with the resulting mixture using a silicone brush. Preheat the oven to 180 degrees, set a baking tray with pies at an average level and bake for 30 minutes.
- We transfer the finished pies into a beautiful dish and serve for tea. Pumpkin pies are lush, ruddy, and with a beautiful golden crust.
