Step cooking
- Heat milk or yogurt to a temperature of 40-45 degrees. Cut into small pieces 30 g of pressed yeast and mix with a mixer to dissolve the yeast.
- Add 2 eggs, one teaspoon of salt, two tablespoons of sugar, mix. Sift 700 g of flour and add in portions to the liquid mass. Knead the dough with a spoon or a combine. When the dough is thick, but still sticks to your hands, add two tablespoons of vegetable oil, mix. If necessary, add more flour. You need to get an elastic, soft dough that does not stick to your hands.
- After that, put the dough in a deep bowl, cover with a towel, leave in a warm place for an hour. During this time, the dough will increase 3-4 times. Keep this in mind when choosing a test bowl. After an hour, grease the palm with vegetable oil and knead the dough. We cover it and leave it on demand until we prepare the filling.
You can use absolutely any filling. If you want to cook from cottage cheese, you can make sweet, adding sugar, or salty, adding salt, greens. You can add a little mashed potato with finely chopped dill to the curd, such pies are very tasty. - Today we will prepare a sweet curd filling. To do this, mix 500 g of cottage cheese with a pinch of salt, an egg and two tablespoons of sugar. Rub the zest with one lemon and send to the curd mass. For the zest, use only the yellow portion of the lemon, white gives bitterness. Here you can add a few nuts, raisins or candied fruits, cinnamon, all as desired. For filling the pies, you need to use dryish cottage cheese so that it does not blur during frying. If your curd mass is too wet, throw it in a colander, in a couple of hours the excess liquid will drain.
- Now we can begin to form pies. To do this, lubricate the silicone mat or any other work surface with a small amount of vegetable oil. Hands are also lubricated with vegetable oil.
- We take part of the dough, form a tourniquet from it, divide it into portioned pieces weighing approximately 55 grams. We form balls from portioned parts and knead them, making cakes. It’s best to do everything by hand without using a rolling pin. In the middle of the cake we put a tablespoon of curd filling. Glue the dough like a dumpling, and give it an oval shape, rolling it with your hands. How to give a beautiful shape to the pies, you can look at the photo or video under the recipe. - Pour vegetable oil into the pan, let it heat and spread the pies, keeping the distance between them. Fry on both sides until golden brown. After that, put it on paper napkins to remove excess oil. We shift to a serving dish, and we can serve it to the table.
