Step cooking
Dough
- Sift 400 g of flour into a bowl. Add 0.5 tsp. salt. Mix salt with flour.
- We make a deepening and pour in 140 g of vegetable oil.
- Hands well grind flour and butter. It turns out baby.
- Gradually pour in 140 - 150 ml of water.
- Knead the dough. Putting it in a com. The dough should turn out soft and smooth.
- Continue to knead on the table for 3 to 4 minutes. This dough does not require long kneading. It turns out elastic, does not stick to either the table or the hands. It does not need to be hammered with flour, otherwise it will become tight.
- Roll the dough into a ball. We send it to a food package, let it rest for 20 - 30 minutes.
Filling
- We clean 2 large onions, my. We divide each onion into 4 parts and cut quite thinly. We put the pan to heat on fire. Pour some vegetable oil, approximately 20 ml. In a heated frying pan, send the onions to fry.
- We will fry until light golden color over high heat, stirring all the time. Fry onion in a small amount of oil.
- When the onion has become softer and has acquired a light golden color, we shift it into a bowl so that it cools down.
- On a coarse grater, rub 250 g of mozzarella cheese. If you do not have such cheese, you can replace it with processed cheese.
- Add 200 g of cream cheese to grated cheese. It should be room temperature and soft.
- Break 2 eggs and mix with cheese.
- Pour salt. The amount of salt depends on what kind of cheese you have. Add 1/3 tsp. black pepper, 1 tsp. dried garlic, 1/2 tsp oregano.
- We shift warm onions into the same dishes, not hot anymore. See that there is not a lot of oil in the onion, if there is a lot of it, it is better to drain through a sieve.
- Finely chop 25 g of parsley and dill. Add chopped greens.
- Mix everything thoroughly until smooth.
Pies
- 30 minutes passed, the dough rested, we crushed it on the table. The dough does not require adding flour. We make a roller out of it and divide it into 16 parts. You get 16 pies. Although the size of the pies you can adjust yourself.
- After dividing into pieces, we select the dough of each ball inside and roll it into a ball.
- We give the dough to rest, while we roll all the balls. When we get to the last one, the first balloon will already rest. Formed pieces of dough must be covered with cling film so that they do not ventilate.
- Cover the baking sheet with parchment paper. We do not lubricate the paper with anything, since we have a lot of oil in the dough. Turn on the preheat oven to 210 degrees.
- We roll out the dough very thinly so that the pie will have many layers when we spin it. Roll out until it becomes transparent. The dough is very pliable, it rolls well and stretches.
- The dough can be slightly stretched with your fingers to give it a rectangular shape.
- We spread the filling, not reaching the edge, on the one hand. There should be a lot of fillings.
- We close the filling on top with a smaller edge, twist the side edges, twist the pie like a pancake.
- We spread the pie on a baking sheet with the seam down. We form all the pies in the same way and put them on a baking sheet.
- We chop 1 yolk in a cup, grease them with all the pies so that they turn out to be rosy and beautiful.
- Pies can be sprinkled with sesame seeds to make them more interesting and beautiful.
- Put the pies in the preheated oven. We will bake pies for 20 - 25 minutes. You look in your oven.
