Dough
- First you need to carefully sift the wheat flour.
- Next, in a small pan or ladle, combine 250 ml of milk and 250 ml of water. We heat up.
- We add yeast, sugar and salt to half the sifted flour. Add vegetable oil.
- Gradually stirring, we introduce warm milk with water. Continuing to stir, add the remaining flour until the dough forms in a soft bowl. Next, put the dough on a tabletop sprinkled with flour or a silicone mat and knead until the dough stops sticking to your hands. After that, put the dough in a container greased with vegetable oil, cover with a towel and leave for 40-60 minutes, until the dough doubles in volume.
Filling
- While the dough is coming, we are preparing the filling. Pour three chicken eggs with cold water, put on a stove and bring to a boil. After boiling, cook for 10 minutes. We clean the eggs and finely chop.
- We wash the rice with cold water, after which it is drained. Next, pour the washed rice, pour a mixture of water and milk, salt to taste and bring to a boil. Next, cook 13-15 minutes until tender. We wash the finished rice with cold water and add melted butter to it. Mix everything thoroughly.
- After that, put the chopped eggs to the rice. If desired, other ingredients can be added to the filling, such as green onions or green peas. Please note that it is better to take peas fresh or frozen, but not canned.
Pies
- We knead the dough and knead it for 1-2 minutes. Next, divide into small pieces.
- Each piece is thinly rolled out and put on it a portion of the filling. Further options are possible. You can form a pie in the traditional way: pinch the edges and lay the seam down. Or you can give the patties a more intricate shape. To create a pigtail pattern, lightly grease the dough around the filling with a beaten egg. Next, cut the dough into strips. We rotate the upper edge of the test, shift the strip to the right to the left, move the strip to the left to the right. This process must be repeated with all remaining strips of dough. Turn the edge of the pie.
- The same procedure is repeated with all pieces of dough. We leave the formed pies for several minutes, while the oven warms up to 180 degrees.
- We lay out the formed pies on a baking sheet previously lined with baking paper and grease with a loosened egg. Bake for 30-35 minutes. Grease the prepared pies with water or cover with a towel. Enjoy your meal.
