Step cooking
The formation of pies includes two stages: kneading yeast dough and preparing the filling.
Stuffing for pies
- We take 4 eggs, put them in a pan and set to simmer for about 15 minutes.
- After the eggs are boiled, let them cool, then clean and cut into small cubes.
- Next, take 1 bunch of green onions, rinse it and chop finely.
- We combine finely chopped onions and eggs, add a pinch of salt to them and mix.
- Butter, in the amount of 2 tbsp. l., heat and pour into a mixture of onions and eggs. Mix, cover with cling film and set aside.
Pastry dough
- To prepare the dough, we take 125 g of milk, add 25 g of live yeast and 1 tbsp. l Sahara. Mix well, cover with cling film and leave to stand in a warm place for about 15 minutes.
- Sift the flour weighing 500 g, first add 1 tsp. salt and 1.5 tbsp. l Sahara. Mix the whole dry mixture until smooth. We pour the yeast mixture, which managed to ferment in 15 minutes, to the resulting mixture of flour, sugar and salt.
- The remaining 125 g of milk is combined with 1 egg, mixed and also poured into the dough. Knead the ingredients with a tablespoon and add 75 g of softened butter to it. We continue to knead the dough for about 5 minutes.
- Now pour about 1 tbsp into a clean deep plate. l vegetable oil, lubricating them with all the walls of the dishes. Put the dough in it and add another 1 tbsp. l oils. Knead the dough thoroughly with your hand. When the dough stops sticking to your hands, cover it with cling film and leave it to stand for 1-1.5 hours.
- After an hour, we take out the dough and divide it into equal parts. You should get about 13 pies.
- Each piece of dough must be shaped into a circle, covered with a film and allowed to lie down for about 7-10 minutes.
- When 10 minutes of the allotted time have passed, each of the pieces of dough is rolled out using a rolling pin and put 2 tbsp. l toppings. Then wrap the dough, thereby forming a pie.
- It's time to turn on the oven and let it warm up to 180 degrees. When all 13 pies are ready, take out a baking sheet, cover it with parchment paper, and spread the dough with the filling on top. Cover the pies with foil and let them stand for 30 minutes.
- After half an hour, grease the pies with egg yolk and send them to the preheated oven for 15-17 minutes.
