Step cooking
Dough
- Heat the milk and pour it into a deep bowl to knead the dough. Pour yeast into it. Stir thoroughly until the yeast is completely dissolved. Salt, vegetable oil, a loosened egg and melted butter are sent to the milk-yeast mixture. We mix everything.
- We introduce pre-sifted flour in small portions and knead the dough. First with a spatula, and then with your hands. The dough should be homogeneous, soft, supple and even a little sticky, but no more flour is needed.
- Put the dough in a container greased with vegetable oil. Cover with cling film and leave for 1 hour at room temperature.
Filling
- Grind the boiled chicken meat from the legs and pour it into a deep container.
- Peel the onion and fry until light golden, then add to the chopped meat. Cut into small cubes hard-boiled chicken egg and also send after the onion.
- Salt and pepper to taste. Mix thoroughly. For juiciness, add a few tablespoons of chicken stock to the filling, in which the legs were boiled.
Pies
- When the dough has risen, divide it into equal parts of about 45-50 g each. It can be weighed on a kitchen scale or done by eye. We roll each piece into a ball. To prevent the dough from ventilating, you can cover it with a towel during cooking.
- Roll each ball into a circle about 5 mm thick. In the middle we put the filling, about 1.5 tsp.
- We pluck the edges well. With palms we give a neat shape. We cover the baking sheet with baking paper. Put the prepared pies on a baking sheet with the seam down. Please note that the pies will increase in size, so you do not need to lay them too close to each other. Cover with cling film and leave for 20 minutes.
- Next, grease the patties with a loosened egg and sprinkle with sesame seeds.
- We send to bake in the oven, preheated to 190-200 degrees. Bake for 20 minutes. Put the prepared pies on a dish and cover with a towel. Enjoy your meal!
