How to cook the filling
- Wash, peel and boil the potatoes (800 grams) until cooked. Mash, add butter (50 grams).
- Rinse, finely chop the dill (small bunch). Put it in cooked mashed potatoes. Add a pinch of seasoning “To potatoes”, a pinch of black ground pepper, mix the filling. Cool to room temperature.
How to make a dough
- In a deep bowl, put salt (1 teaspoon) and sugar (1 teaspoon).
- Pour kefir with a fat content of 2.5% (500 ml) into a bowl. Add baking soda (1 teaspoon). Stir the mixture well with a whisk until salt and sugar are completely dissolved.
- Add the sifted flour (700 grams) to the bowl in small portions. Stir the mass with a culinary whisk until it has the consistency of thick sour cream. To stir a thicker mixture, take a spoon.
- Add vegetable oil (40 ml) to the dough.
- Lubricate the work surface with vegetable oil, knead the dough until cooked.
- Divide the resulting batch into 20-22 equal parts.
How to make and bake pies
- Hands or a rocking chair roll into a round cake (approximate diameter 7-8 cm). To prevent the dough from sticking to your hands and work surface, add flour (50 grams).
- In the middle of each harvest, put a tablespoon of potato filling with a slide.
- Carefully pinch the edges of the patties, smooth the seam.
- In a saucepan, warm the oil well (100-120 ml), take the amount of oil 1.5-2 cm above the bottom. Put the pies in the stewpan. Fry until golden brown on both sides for about 3-4 minutes on each side (see for readiness) on medium heat. As you fry, add vegetable oil to the desired level (1.5-2 cm) in a pan or stewpan.
- Put the finished cakes on a paper towel to remove excess oil.
The pies are rosy, crispy and tender. They are served hot or cold. Pies with potatoes are eaten with sour cream, vegetable salads, various sauces.
