Step cooking
Cooking dough
- In 50 ml of warm water, pour 2 tsp. dry yeast, 2 tsp sugar and 1 tbsp. l flour, whisk mix until all the ingredients are dissolved. Combine 250 ml of hot milk and 250 ml of hot potato broth, pour 1 tsp. salt, mix.
- Sift 700 g of wheat flour into a deep bowl. But first, we use not all the flour, but only half. We pour in the liquid ingredients, due to the hot liquid we brew the dough. Mix well.
- Let the resulting mass cool, and then pour in the yeast, which fit well. We knead them in the dough. Pour vegetable oil in portions and mix it in the dough.
- Then we spread the dough on the work surface and with the help of hands, constantly adding flour, knead the dough well. The dough is soft and elastic, but moderately elastic, it should not spread.
- Well-kneaded dough, lightly grease with vegetable oil, place in a bowl, cover with cling film / lid or a kitchen towel and leave for 30 to 60 minutes to proof.
Cooking toppings
- First, boil 500 g of potatoes. Put the finished potatoes in a bowl, add 10 - 15 g of butter and make a mashed potato with a pusher. If the mashed potatoes are a little dry, just add a little water from the boiled potatoes.
- You can use any mushrooms that you like.
- Rinse them and cut them into medium-sized pieces. Grind one onion. First, fry the onion in a frying pan until golden brown, then add the mushrooms and fry until ready to cover. Salt and pepper to taste.
- Combine the finished ingredients for the filling (mashed potatoes and fried mushrooms) together and mix.
Cooking pies
- The dough should increase well in volume. We will form balls from it. From this test, 22 pies are obtained. So that the dough does not stick to your hands, periodically lubricate them with vegetable oil.
- Formed balls cover with cling film and leave to rest for 10 minutes.
- Then we turn each ball over with the smooth side down and crush it with our hand.
- We distribute 1 - 2 tsp for each cake. toppings. We pinch the edges and form pies.
- We put the pies on a baking sheet covered with parchment paper, again we cover it with a film and let it stand for another 10 minutes. In the bowl, stir one yolk and 1 tbsp. l water and grease each pie.
- We send the pies to the preheated oven to 180 degrees for 25 - 30 minutes until golden brown. We grease the finished, hot pies with butter. Let them cool, put on a plate and call everyone to the table.
