Step cooking
Dough
- Pour 150 ml of water into a saucepan for 0.5 L, put on a stove and heat to a warm state. Pour warm water into a deep container, pour 2 tsp into it. salt and 1.5 tbsp. l sugar and stir with a tablespoon until the crystals are completely dissolved.
- Add 150 ml of odorless vegetable oil and 390 g of flour to the water, after which we knead the soft dough with your hands.
- We form a ball from the dough, wrap it in cling film and leave it to rest for 20-30 minutes at room temperature. If the room is hot, it is better to send the dough into the refrigerator for this time.
Filling
- Grind through a sieve 350 g of cottage cheese, add lemon zest, rubbing on a fine grater the peel of 0.5 lemon, 3 tbsp. l sugar, 1 tsp. vanilla sugar, break 1 chicken egg into a container and mix until smooth.
- Sift into the curd mass through a sieve of 1 tbsp. l starch and mix thoroughly again.
- We form a sausage from the resulting mass and divide it into equal 4 parts with a knife.
- We roll into the sausage one part of the curd mass and divide it into 6 parts, and then form small rollers from them. We do the same with the remaining 3 parts, and as a result we get 24 rollers.
Pies
- After 20-30 minutes, unfold the dough, form it into a sausage and divide it into 4 parts. We leave one, and put the remaining three in a plastic wrap so that the dough is not weathered. Turn on the oven at 200 ° C and leave it to warm. We roll the left part into a sausage, divide it into 6 equal parts and roll the balls out of them.
- Using a rolling pin, we roll each ball into a 12 × 15 cm rectangle.
- We spread the curd filling on the narrow side from the edge, cover the curd mass on the sides with the dough so that the filling does not leak out during baking, and roll it up.
- In a similar way, we form the remaining pies until the dough and filling are over. Place 1 yolk in the bowl, add 0.5 tsp. water and mix both ingredients thoroughly.
- We cover the baking sheet with baking paper and put the pies on it with the seam down at a distance from each other. Lubricate our products on top in 3 layers with yolk whipped with water using a silicone brush. If desired, they can be sprinkled on top with poppy seeds.
- We send our pan with pies into the preheated oven to an average level for 25 minutes. After 25 minutes, we take out a baking sheet, put the prepared pies on a dish with a spatula, let them cool and serve.
Important! To diversify the taste of such pies, you can add raisins, chopped dried apricots or prunes to the curd filling. On top of such products are also decorated with sesame seeds or chopped nuts.
