Just want to draw your attention to the fact that almost all the ingredients in this recipe can be replaced with others, or not used at all. Therefore, adhere to the basic principles of preparation, and experiment with the ingredients. You have a chance to bake a unique dish of your own authorship.
- Rinse, dry 3 handfuls of spinach and finely chop into pieces. We used fresh spinach, but frozen is also suitable for this recipe. If desired, you can pour fresh spinach over with boiling water so that it decreases in volume.
- Finely chop 5 basil leaves. If you do not like this green, then you can skip this step.
- On a coarse grater we rub 100 g of gouda cheese and 200 g of feta cheese. Instead of gouda, you can grate any other hard cheese. Instead of feta, you can take feta cheese or suluguni.
- In a deep bowl, beat 3 eggs slightly, add 100 ml of fresh milk, 150 ml of olive oil, salt and pepper to taste. It’s good if you have fresh farm milk and eggs. When choosing products in the store, pay attention to their expiration date. Beat the egg mass with a whisk or mixer until smooth. You can additionally use other seasonings if you want to make the taste of ready-made pastries more piquant.
- Sift 180 g of flour with 1 tablespoon of baking powder into the same mass. If you do not have a baking powder, you can add one teaspoon of soda, slaked with the same amount of vinegar or lemon juice.
- Knead the dough. According to the consistency, it will turn out, like on pancakes, maybe a little thicker. Once the dough is ready, add 200 g of grated feta cheese to it. Pour 100 g of gouda cheese, chopped spinach and fresh basil into the dough.
- Cover the baking dish with baking paper and pour over the mass. We align the dough over the entire area of the form, ram a little. If time permits, let the cake stand for 20 minutes.
- After that, put the dish in the oven, heated to 180 degrees, and bake for 45-50 minutes. We wait until the cake has cooled, and serve it to the table. In addition, prepare a light salad of fresh vegetables. This cake is ideal for a snack during the day. It is very healthy, satisfying and tasty. It can be eaten both hot and cold. If necessary, store in the refrigerator for 3-4 days. If you heat the cooled cake in the oven, it will turn out as if only from the stove.
