Step cooking
- We put a pot of water on the fire, let it boil, add one teaspoon of salt. We send 700 g of spinach to it so that it decreases in volume. Boil greens for 1-2 minutes.
- Throw the spinach into a colander and wait until it cools. If you wish, you can use raw, but then you will need less of it. If you use frozen, you can refuse additional heat treatment.
- Cooking the filling. Break 2 eggs into a large bowl. Since feta cheese is quite salty, add a small pinch of salt to the eggs and mix thoroughly so that the yolks combine with the proteins.
- For the filling, we will use cream cheese. You can take any, or make it yourself. Dice 150 g of feta cheese or feta cheese. Thanks to the salty cheese, the filling is very tasty.
- Add 100 g of cream cheese and 150 g of feta cheese to the eggs. Knead the cheese, but not completely, so that small pieces remain. Add 100 g of grated mozzarella cheese, mix. Instead of mozzarella, you can add any other hard cheese.
- Fry 60 g of pine nuts in a pan for literally 3-4 minutes. No fat is needed to fry them in the pan. Pay attention to how much water came out of the spinach, you can squeeze out a little more so that there is no excess moisture in it.
- Prepare the dough. We will use 500 g of ready-made puff pastry. You can take the store, or make the dough yourself. Roll out the dough and cut a little more than the size of your baking dish. Lubricate the form with vegetable or butter or just sprinkle with flour. We spread the dough layer and form the sides.
- Spinach spread in cheese mass and add previously roasted nuts, mix. We try the filling, if necessary, add the missing ingredients, for example, spices. But based on personal experience, you don’t have to add anything else.
- Spread the whole mass on the bottom layer of dough. We roll out the second layer of dough, which will be equal to the diameter of the mold. We seal the cake on top with another layer of dough, it is not necessary to pinch the edges. We make small punctures with a fork so that excess moisture evaporates. In the bowl, beat one chicken egg and carefully lubricate the top of the pie with a silicone brush.
- We remove the dish in the oven, preheated to 180-190 degrees, bake for 20-30 minutes. As soon as the cake is browned, we can get it. With a wooden skewer we check the baking for readiness. We wait until the dish has cooled, and begin feasting.
