- Sift 300 g of first grade flour into a deep bowl. We cut into small pieces 200 g of butter and send to flour. The oil should be cold - you do not need to get it out of the refrigerator before it melts.
- Hand grind flour and butter into crumbs, add 100 g of sugar to it, mix well again.
- Then drive 2 chicken eggs into the mixture, knead the dough. You do not need to knead it for a long time so that it does not turn out too hard.
- We roll the dough with a ball, wrap it with cling film or just cover a bowl with it and send it to the refrigerator for 30 minutes.
Cooking stuffing
- We put on a fire a stewpan with a thick bottom. Pour 400 g of berries into it, this is half of the total serving for the pie.
- Knead the berries with a spoon, boil until the excreted juice disappears, stirring occasionally. From this berry assortment we need to get a thick, creamy mass. It takes 20 minutes to cook.
- Then we wash the apple, peel it. For a pie, it is better to use a sweet apple. If you have sour or sweet and sour, then you can just add a little more sugar to the filling.
- Remove the core from the apple and rub the flesh into a separate bowl. From the resulting mass, squeeze the juice and send it to fresh berries.
- Here we send boiled berries, mix well.
- Add three tablespoons of starch. Adjust the amount of starch yourself. You may need to add it a little more if the filling is very liquid.
- Then add 130-150 g of sugar, mix well, leave on demand.
We form and bake a pie
- We take out the dough from the refrigerator, divide it into two unequal parts.
- For the most part, we roll out the cake, which will be larger in diameter than your shape.
- We shift the cake to the form. Previously, you can sprinkle it with flour or grease with butter. But, as experience shows, such a dough does not stick to the bottom, because it is fatty in itself.
- We distribute the cakes evenly along the bottom of the mold, make high sides so that the filling does not leak. Then pour the filling, distribute it evenly. We make sure that it does not leak through the side.
- From the second part of the dough we roll out the cake, which will correspond to the diameter of your mold. We cut a hole in the middle.
- Put the cake on top of the filling, tightly connect the edges of the first and second cake.
- You can make a beautiful weave from the compound. If there are pieces of dough left, make them into different shapes or just squares, and place the blanks on top.
- Beat egg white, grease the surface of the pie with it.
- In the hole we put 20-30 g of butter.
- We send in the oven preheated to 180 degrees for 45 minutes.
- We take the cake out of the oven, let it cool completely, then send it to the refrigerator for 2 hours.After that, serve portioned pieces for tea or coffee.
