- Wheat flour - 575 g
- Butter, chilled - 410 g
- Water, highly chilled - 8 tbsp. l

- Cane sugar - 5 tbsp. l
- Salt - 1.5 tsp.
- Lemon juice - 1 tbsp. l
- Cinnamon - 1.5 tsp.
- Nutmeg - 1/4 tsp
- Egg yolk - 1 pc.
Step cooking
- At the preliminary stage, we need to put a glass of water in the refrigerator, we will need 8 tablespoons for the dough. Also, of the total amount of butter, 350 grams should be well cold, the remaining 60 grams at room temperature. Sift 450 grams of flour through a sieve into a large container. Pour 2 teaspoons of refined sugar and 1 teaspoon of salt into the same container. Mix the ingredients thoroughly with your hands.
- We take 350 grams of cold butter and cut it into cubes with a rib of about 1 cm and put them in a bowl with flour.
- Carefully knead the cubes of oil with your hands.
- When the mixture crumbles a little, add 8 tablespoons of cold water. Continue to knead the dough with your hands.
- When the dough acquires a uniform consistency, divide it into 2 parts. One large will be for the base, and the smaller will go to the top of the cake. We form a ball from one part, crush it a little, wrap it in plastic wrap and send it to the refrigerator. The second piece is processed in the same way. The dough should be held in the refrigerator for 30 minutes, preferably about 1 hour.
- Peel the apples from the peel, remove the tail and cut the core with seeds.
- We chop the pulp of apples into very thin slices. Pour the crushed apples into a large pot.
- Add 60 grams of butter to the same container. Pour 5 tablespoons of cane sugar into a saucepan and 5 to 10 tablespoons of regular refined sugar. The amount of regular sugar is determined at your discretion, whoever likes it - sweet or more neutral dough. And it also depends on the acid of apples: the more acidic they are, the more sugar is needed.
- We put the saucepan on the fire and begin to simmer the apples over low heat, while stirring them with a spatula. After the butter melts and the sugar dissolves, simmer for about 5 minutes.
- Add a tablespoon of lemon juice to the saucepan.
- Pour 1/2 teaspoon of salt, 1/4 teaspoon of nutmeg and 1.5 teaspoons of cinnamon there.
- Sift 5 tablespoons of flour into a saucepan. It acts as a thickener, if desired, starch can be used. Thoroughly mix the contents of the saucepan and set aside in a cool place to cool.
- We take out a larger piece of dough, sprinkle flour on the working surface and roll out the mass with a rolling pin into a thin plate. We wrap the dough on a rolling pin and unfold it over the form so that the dough lies in it evenly from all sides.
- With a knife in a circle we cut off the excess. The form with the dough is moved to the refrigerator for cooling.
- From a smaller piece of dough, we form strips of the same thickness. The classic “lattice” of apple pie will be laid out of them. We roll out the mass with a rolling pin into a sheet, the thickness at our discretion.Take a separate large chopping board and sprinkle with flour. We cut a sheet of dough with a knife into strips 1.5-2 cm wide and put it on this board.
- We take out the form with the dough and begin to form the edge of the cake with your fingers, as shown in the figure. After that, if necessary, the dough can be placed for a while in the refrigerator.
- Turn on the oven to warm up to 200 ° C. We put the form with the dough on a baking sheet. We put the cooled filling into the pie.
- We spread the "lattice" of strips. First, we lay out at an equal distance from each other all vertical, and then all horizontal, or vice versa.
- To make the “lattice” wicker, when laying strips of the second direction, bend the strips of the lower row through one and then put them on top of the strips from the second row. When the "grill" is ready, cut off all the excess. We press the edge with our finger, forming a beautiful border. Separate the egg yolk in a separate bowl and add a tablespoon of water to it. Thoroughly mix the ingredients and cover the edges and the “lattice” of the cake with a thin layer of whipped yolk with a culinary brush.
- We move the baking tray with the form into the preheated oven. The cake will be baked at a temperature of 200 ° C for 40 minutes. After the appointed time, the apple pie is completely ready, and can be served at the table.
