Step cooking
Cooking the dough (1st layer)
- Drive one chicken egg into a deep bowl, add 80 grams of sugar, shake with a fork until a homogeneous mass is obtained.
- We will need butter at room temperature, so take it out of the refrigerator an hour before cooking. Cut the butter into small pieces and send to the egg mass. Knead the oil with a fork, mix the mass until smooth.
- Add a pinch of salt and vanillin to the dough, mix again. Then add sour cream, mix well. I used sour cream of 20% fat, you can choose any one of your choice. The main thing is that it is fresh, not sour. We mix 130 g of sifted flour with one teaspoon of baking powder, in two doses add flour to the dough, after each mix the mass until smooth with a fork.
- As a result, we get a thick, astringent dough that sticks to our hands. We cover the bowl with the dough with a lid or cling film and send to the refrigerator.
Cooking the filling (2nd layer)
We take 2 large apples, or 4 small, or 3 medium. We wash them with water, cut in half, remove the core, we will not remove the peel, cut into thin plates. If desired, apple slices can sprinkle with lemon juice so that they do not darken, retain their color.
Cooking the curd filling (3rd layer)
- Drive a chicken egg into a deep, clean bowl, add 70 g of sugar, mix well with a whisk. We also send 200 grams of cottage cheese. When choosing, we prefer a fresh, non-acidic product. Cottage cheese can be of any fat content, this is at your discretion. I used with a fat content of 9%.
- Then add 200 g of sour cream. Use sour cream fresh. I took 20% fat, you can take any at your discretion. Mix all ingredients with a whisk until smooth. Then add 50 g of sifted wheat flour, mix with a whisk until smooth.
We collect and bake a pie
- I recommend using a one-piece shape measuring approximately 35 * 23 centimeters. Lubricate the form with a small piece of butter. We spread the first layer of dough, distribute it evenly along the bottom of the form. On top, lay out the sliced apples in a dense layer.
- Then fill the cake with curd filling, distribute it evenly. We send the cake to the oven, preheated to 180 degrees, bake for about an hour until golden brown.
- After 50 minutes of baking, you can check for readiness with a skewer. Poke a pie with it, if it does not stick to it, then it’s ready. If sticking, bake another 10 minutes. Ready cake can be sprinkled with powdered sugar for decoration. Allow to cool, cut into portions, serve with tea or any other drink.
