Ingredients

Wheat flour 380 g
Butter 250 g
Chicken eggs 2 pcs.
Water 150 ml
Apple vinegar 1 tbsp. l
Mozzarella 150 g
Feta 150 g
Parsley and dill ½ beam
Salt taste

Dough

  1. Pour 380 g of sifted flour into a bowl and rub 250 g of butter into it. It should be cold, but not frozen, so that it is well rubbed and does not crumble.
    Rub the cold butter directly into the flour.
  2. Grind the mixture of flour and oil into crumbs.
    Grind the butter and flour into crumbs.
  3. In a separate dish, add 1 chicken egg, 150 ml of water, 1 tbsp. l vinegar and a pinch of salt. Mix until smooth.
    We beat the egg into the water, add salt and vinegar.
  4. Pour the mixture into flour crumbs, gradually stir and collect the resulting dough into a lump.
    Little by little add water to the mixture of butter and flour, collecting the dough in a lump.
  5. With a lump of dough, we do the following several times: knead it with our hands or roll it to a flat state (1 cm), wrap the edges inward, bend in half and knead again.
    Knead the dough a little.
  6. We collect the dough in a lump, wrap it in a cling film so that it does not wind off, and send it to the refrigerator for 1 hour.
    Puff pastry ready.

Pie filling and layout

  1. We rub the cheese on a coarse grater and additionally knead if necessary. Instead of mozzarella and feta, you can use absolutely any cheese, and also try experimenting with meat or vegetable fillings.
    For the filling, grate the cheese.
  2. Finely chop the greens, add to the cheese.
    Grind the greens and add it to the filling.
  3. We also add 1 chicken protein, add to taste and mix thoroughly.
    Add egg white to the filling.
  4. We divide the dough into 2 parts and roll both of them according to the size of the baking dish. If you do not want or do not have the opportunity to cook the dough at home, the purchase is also perfect. Cover the form with parchment paper and spread 1 part of the dough. Spread the cheese filling evenly on it, leaving the edges 1-2 cm.
    We roll out the dough for the base of the cake, put the filling on it.
  5. In order for them to form well, grease them with egg yolk.
    The edges of the dough are greased with whipped yolk.
  6. Top with 2 sheets of dough. Press the edges with a fork.
    cover the filling with a second layer of dough and pinch the edges.
  7. In the sheet itself, we make frequent cuts or punctures so that the steam comes out and the cake does not swell.
    We make cuts in the cake to release steam.
  8. Grease the cake with whipped yolk. Preheat the oven to 200-210ºС and set the cake to bake. It is prepared for 15-20 minutes.

  9. We give the finished dish to cool slightly, cut into portions and serve together with fresh herbs, white or tomato sauces and a glass of milk or tan.
