Step cooking
Dough
- Take 120 g of warm potato broth, add half a teaspoon of sugar and 5 g of dry yeast to it. Stir and leave the dough for 10 minutes to make yeast.
- Pour 120 ml of warm milk into a bowl, add 1/3 teaspoon of salt and mix.
- Then we pour into it a suitable dough and 30 ml of vegetable oil, again mix well.
- Gradually add the sifted flour. To prepare a soft dough, almost not sticky to your hands, you need about 400-420 g (we focus on consistency). Knead the dough first in a bowl, then put it on a table sprinkled with flour.
- Put well-kneaded dough in a bowl for raising. Cover the bowl with a lid or towel.
- When the dough increases by 2-3 times, we crush it and leave to rise again.
Filling
- Boil 3 eggs. Finely chop one onion. The smaller you manage to chop it, the better.
- We put canned fish in a bowl (any canned food is suitable, we suggest using pink salmon), we do not need oil or brine from it. Knead the fish with a fork.
- On a coarse grater, rub 50 g of hard cheese and 3 boiled eggs.
- Finely chop the greens (green onions and dill are ideal, but you can take any greens you love).
- Pour onion, eggs, cheese and greens into a bowl of fish, add a tablespoon of mayonnaise, a little salt and black pepper, mix everything thoroughly until smooth.
Making a cake
- Put the dough on a table sprinkled with flour, roll it and roll it into a round layer with a diameter of about 28-30 cm. To give it a more even shape, you can put a lid or plate on the layer and circle it around the perimeter. Put the dough off to the side, they will still be useful to us.
- We cover the baking sheet with baking paper, slightly greased with vegetable oil, and transfer the prepared dough layer to it.
- We spread the filling around the circumference, without occupying the center of the layer and not reaching a few centimeters to its edges.
- Cut the middle of the test into 4 sectors and wrap them towards the edge, connecting with it.
- We bend the remaining free edges, making a rim around the filling.
- From the remains of the dough we sculpt a lump, roll it out and cut out figures similar to fish.
- They decorate the remaining areas of the filling not covered with dough.
- Beat the egg yolk and grease the surface of the pie with it. Leave the cake for 10-15 minutes to raise.
- Meanwhile, preheat the oven to 200 degrees and send the cake to bake for 30-35 minutes - until browning.
