Step cooking
- Remove the butter in advance from the refrigerator and leave at room temperature to make it soft. Preheat the oven to 180 ° C.
- Sift 2 cups flour and spices into a bowl - 1/2 tsp. cinnamon and 1/4 tsp turmeric (these ingredients are optional), pour 1/2 cup. sugar and 1/4 tsp salt. Mix all dry ingredients.
- Add 2 eggs and 150 g butter at room temperature or slightly warmed up to the dry mixture (it can be replaced with the same amount of thick homemade cream or sour cream, margarine can also be used).
- 1/2 tsp pour soda on flour mixture and extinguish 1 tsp. vinegar. If you put sour cream or other dairy products in the dough, you do not need to extinguish soda with vinegar. Vinegar is also not needed if you are using a baking powder and not soda. Immediately begin to knead the dough - first with a spoon, and then, when the butter is properly rubbed with flour, with your hands, until the dough has taken all the flour, it will become elastic and soft. Knead quickly so that the oil does not melt from the heat of the hands.
- Prepare a baking sheet - there is no need to lubricate it, since the dough includes oil, it just needs to be dry and cold. Put the dough on a baking sheet and spread evenly over the entire surface. The consistency of the test allows you to do this with your hands, without resorting to rolling pin. Make low edges around the edges.
- Top with a thin layer of filling - jam or thick jam, smooth.
To give the cake new shades of taste, it can be sprinkled with chopped nuts - walnuts, peanuts or hazelnuts. Preliminarily, it is better to fry the nuts a little in a dry pan. - Place the cake in a preheated oven for 20-25 minutes. The readiness of the pie can be judged by the browning golden sides. Let the finished cake cool, remove from the pan, sprinkle with powdered sugar, cut into portions and serve with tea, coffee, milk.

- it is better to take flour with a low gluten content. If you don’t know what gluten content is in your flour, just add starch to the dough (1-2 tbsp. In each glass of flour);
- butter, margarine or cream, you must choose the highest grade, because low-quality fats can give the finished product an unpleasant aftertaste;
- to make the baking more crumbly, you can put only the yolks in the dough (they should be twice as many as whole eggs according to the recipe);
- shortbread dough needs to be kneaded quickly, no longer than 1-2 minutes, otherwise it may become hard, it will roll poorly and crack when baking;
- the layer of dough for the pie should be 4-8 mm thick, the thinner one will burn, and the thicker one will not bake inside, but will dry on top;
- to remove from the baking sheet you need completely cooled products, because the hot shortbread dough is very fragile, and easily breaks.
