Step cooking
Cooking dough
- Pour 400 ml of warm milk, 100 ml of vegetable oil into a deep bowl, drive one egg in, pour 1 tbsp. l sugar, 1 tsp. salt and add 42 g of fresh yeast. Pre-mash yeast. Instead of fresh yeast, you can use dry yeast, they will need 9 - 11 g.
- In a stewpan, melt 30 - 40 g of butter. Add it to the bowl to the rest of the ingredients, mix thoroughly with a whisk until the yeast is completely dissolved.
- Sift 825 g of wheat flour for enrichment with oxygen. Flour may need a little more or less, most importantly, to make the dough soft. The softer the dough, the more airy the cake will turn out.
- Next, knead the dough well for 5 to 7 minutes, it will turn out elastic, not sticky to the hands.
- Lubricate a deep bowl with vegetable oil, put the finished dough in it, cover with a lid or tighten with cling film and set it in a warm place for 50-60 minutes.
Cooking toppings
For this pie, absolutely any filling to your taste is suitable. In a pie, you can combine 2 to 3 different fillings.
For the first filling, fry the lamb with onions and bell pepper, chopped with a medium cube, in a pan. Sprinkle with paprika, cilantro, add salt and pepper to taste. Juicy filling with fragrant lamb and crispy pepper is ready.
For the second filling, boil the potatoes in their uniforms. While it is hot, clean, remember the fork. Add to it the fried chicken thigh, salt, pepper to taste, chopped green onions and parsley. Tasty, satisfying filling is ready.
Making a cake
- Take the dough, which increased in volume by 2 times. We get out of the bowl and roll out one large layer. The dough can be rolled as thick as you like. The optimum thickness will be 6 - 7 mm. We take any container - a bowl, a glass, a serving ring, the main thing is that the diameter suits you, and cut out circles throughout the dough sheet.
- We collect the scraps of dough, roll it into a ball and put it in a bowl for proofing. Take a circle of dough, apply about 1 tsp. fillings, pinch from the sides, and leave the middle open. So do with all the circles.
- Line the baking dish with parchment paper and lay out the prepared circles from the center to the edges in a circle in the form of a flower. From the remaining dough we form small balls and put them into empty places along the edges of the pie so that the whole form is filled. Cover the cake with a dry towel and leave for 5 - 10 minutes.
- While the pie is melting, preheat the oven to 180 degrees. Drive 1 yolk into the bowl and add 1 tbsp. l milk, stir and brush the dough with a silicone brush. Put in the oven to a medium level and bake 25-30 minutes until golden brown.
- Cover the finished pie with a towel and let cool.
