Preparation of vegetables and herbs
- Wash and cut the tails of 600 grams of young zucchini. Cut vegetables into thin half rings, slicing approximately 3 mm thick.
- Peel 1 medium onion, cut the head into 4 parts, chop the onion with quarters of rings. Make the slices about the same thickness as the slices of zucchini (2-3 mm).
- Crush 3 peeled garlic cloves with a flat side of a knife, chop finely.
- Wash, brush off excess water and finely chop 15-20 grams of dill. For cooking, use only thin branches, removing thick stems from the bunch in advance.
- Put chopped vegetables and herbs in a deep bowl, mix the ingredients well.
- Salt a mixture of vegetables and herbs to taste, add black ground pepper at your discretion. Mix the ingredients well.
How to make a pie fill
- In a separate deep bowl, put 250 ml of sour cream with a fat content of 15%, break 3 large chicken eggs into sour cream.
- Add salt and black pepper to a bowl to taste, pour half a teaspoon of ground nutmeg. Stir the mass well with a cooking whisk.
- In the resulting mass, add 3 grams of baking powder for dough and 200 grams of pre-sifted wheat flour. With a whisk, mix the contents of the bowl until a homogeneous batter is obtained.
Assembling and baking a pie
- A mixture of vegetables and dill pour batter. Stir with a spoon or a cooking spatula until the solid components are evenly distributed in the liquid part. Allow the mixture to brew for approximately 10 minutes at room temperature.
- Grate 50 grams of hard cheese on a fine grater. Slightly more than half the cheese in a bowl of cake mass. Thoroughly mix the cheese with a mixture of vegetables, herbs and fill.
- Lubricate the round baking dish with a diameter of 23 cm with refined vegetable oil (of your choice) using a cooking brush. At the bottom of the form, place the cut circle of parchment paper (according to the diameter of the form), well coat the paper with vegetable oil.
- Put the mass for the pie in the prepared form. With a spatula, smooth its surface. Sprinkle the dough evenly with the remaining grated cheese.
- Heat the oven to a temperature of 180 ° C, bake a pie with zucchini for about 30-40 minutes. The exact time it takes to bake depends on the features of your oven.
- Remove the finished browned cake from the oven, let it stand for about 10 minutes, so that it cools down. Gently place the pastries on a serving plate using two wide serving plates. First, cover the cake pan with one plate, turn over. Remove parchment paper from the bottom, cover with a dish and turn the pie over again.Slice the pie in portions and serve.
