Ingredients
- Flour - 210 g
- Butter 82% - 90 g
- Powdered Sugar - 60 g
- Vanillin - a pinch
- Yolks - 3 pcs.
- Sour cream 20-30% - 30 g
- Salt - a pinch
- Currants - 600 g
- Sugar - 220 g
- Starch - 30 g
- Water - 80 ml
- Squirrels - 3 pcs.
- Vanilla Sugar - 10 g
Step cooking
- Combine the sifted flour with salt, vanilla and powdered sugar.
- Mix sour cream with yolks until smooth.
- Cut the cold butter into cubes and rub into small crumbs in the flour mixture.
- Add sour cream with yolks to it and quickly knead the dough.
- We hide the dough in a film and send it to the refrigerator for an hour.
- Roll out the dough and put it in a mold.
- We make some punctures in the test.
- Bake in a preheated oven to 190 degrees for 15-20 minutes.
- Pour the starch with cold water and stir.
- Combine currants with 80 grams of sugar and knead with a spoon. Juice should appear.
- We put the pan with currants and sugar on a medium heat and, stirring, bring to a boil. Cook over low heat after boiling for 10 minutes.
- Starch mix, add to the berry mass.
- Mix and bring to a thickening, remove from heat.
- Combine the proteins with a pinch of salt and beat at minimum speed.
- Without interrupting the whipping, add 1 tablespoon of 140 grams of sugar and vanilla sugar.
- Gradually increase the speed of the mixer to the maximum and beat the protein for 4-5 minutes until stable peaks.
- We shift the proteins into a pastry bag with a nozzle.
- We spread the currant mass on the cake and level it.
- Press the squirrels on top, forming any pattern.
- We bake the collected pie in the oven, preheated to 140 degrees, 35-40 minutes until creamy.
- Cool the pie on a wire rack and serve to the table.
