Step cooking
To fully adhere to the recipe, butter must be frozen beforehand. You can just send it to the freezer the day before, so you don’t have to wait until it freezes before cooking.
Cooking dough
- In a deep bowl, send 260 g of sifted flour. Immediately add 1 teaspoon of baking powder, a pinch of salt, 3 tablespoons of sugar to it, mix the dry ingredients. If there is no baking powder, replace it with a third of a teaspoon of soda, slaked flour.
- Then grate the frozen butter with a coarse grater and rub the mixture with your hands into small crumbs. In this form, we leave it on demand.
Cooking stuffing
- Then, in a blender bowl, send 400 g of fresh cottage cheese, 3 tablespoons of sugar, one egg and 4 tablespoons of sour cream. First, mix the mixture with a spoon, then beat with a blender until smooth.
- The mass will turn white, increase in volume, will be homogeneous without lumps. You can cook the filling without a blender by simply grinding it with all the ingredients, but whipping is tastier. If you wish, you can add raisins, nuts or candied fruits to it.
We collect and bake a pie
- Lubricate the baking dish with a small piece of butter. For our pie, we used a mold measuring 22 * 30 centimeters. If you have one, good, if not, use what is convenient for you.
- We spread part of the crumb dough to the bottom of the mold, distribute it evenly with our hands, squeeze it a little, so that after baking the lower cake can hold the mold, and not crumble immediately.
- Then we spread the curd filling, form a uniform layer from it.
- Sprinkle on top evenly with crumb dough. You do not need to crush the crumbs with your hands, leave in the form of powder.
- Preheat the oven to 200 degrees and send the bake to bake for 30 minutes. The finished cake should brighten beautifully.
- After that, we take it out of the oven, let it cool slightly. Cut into portions and serve your family with tea or treat guests. The cake is very tender, moderately sweet, just melts in your mouth.
