- We will prepare all the ingredients and the work surface. The taste and friability of shortcrust pastry largely depends on the quality and quantity of butter. Therefore, take 130 g of good butter 82.5% fat. It must be softened. We don’t use eggs in this recipe, which reduces its calorie content. Put butter and 60 g sugar in the mixer bowl. We interfere at medium speed until the mass brightens and becomes airy, for about 3 to 4 minutes. Do not rush with mixing butter with sugar, otherwise its granules will be felt in the finished dough. Also, do not interfere for a very long time, since oil can give off water.
- Then sift 130 g of wheat flour, enriching it with oxygen, pour into the mixer bowl. Next, add 60 g of rice flour and a pinch of salt. Mix everything until a homogeneous mass is formed.
- Next we work with our hands - we will form the dough into a ball. The dough is soft and elastic, not sticky to the hands.
It should be noted that the addition of vanilla, cinnamon, and chopped nuts can give a diverse taste to the dough. By adding new spices every time you make a pie, you will enjoy a new taste. - We spread the dough in a detachable baking dish with a diameter of 16 cm and distribute it with the fingers on the bottom of the mold, we do not bumps. Visually divide the cake into 8 parts and outline it with a knife, without cutting it to the end. We prick it around the perimeter with a fork so that it does not swell during baking.
- We put the form with the dough in the refrigerator for 30 minutes. There is a second option for cooling the dough - after forming it into a ball, put it in a food bag or wrap it with cling film and send it to the refrigerator, and then distribute it in shape. From the resulting test, you can cook not only a pie, but also light, shortbread cookies. While the dough is cooling, preheat the oven to 170 degrees.
- We send the cake to the oven to the middle level and bake for 30 - 35 minutes. The temperature and time of baking the cake will depend on your oven, so carefully monitor the process to reduce / increase the cooking time or increase / decrease the temperature, if necessary.
- When the cake is baked and browned, remove from the oven and immediately sprinkle with sugar and let cool. The shortcrust pastry pie is ready, cut into pieces and serve.
